Roasted Vegetables

Ingredients

parsnips
red pepper
yellow pepper
courgette
onions
vegetable oil
garlic
salt


Use a selection of vegetables which are delicious roasted such as parnips, peppers, courgettes, onions etc.

Cube all the vegetables up into the same sized pieces and put in a roasting pan. Add enough oil to coat them all and season them with crushed garlic and salt. Make sure that you mix them up well so they are all evenly coated with oil.

Put them into a hot oven (200c) until golden brown. (they take about 30-60 minutes) Check regularly to make sure the vegetables are still coated with oil and turn them to make sure they are evenly browned.

I don't have an exact recipe, I just throw everything together and play with it till I get the taste and consistency I like. Here's the basic ingredients though. I don't always put in the carrots and celery - only if I have them. I use what I have in my garden. If the peppers don't look good, I don't put them in. If the yellow summer squash isn't good, leave it out, add more zucchini. It's really up to you.

Summer Squash "stuff"

1 zucchini - sliced
1 yellow summer squash - sliced
1 large onion - diced
1 green/yellow/red pepper - diced
2 stalks of celery - diced
2 carrots - diced
fresh or canned tomato - diced
salt/pepper/garlic to taste

Sweat the onion and celery, add everything else, and cook over low heat till veggies have desired texture.

Works great as a side, served as is over rice, or can throw in some fried ground beef and serve over rice as full meal.

Welcome to the Terrible Twos!!! YOU need to be in control, and right now you're not. When she throws a fit, tell her NO and then ignore her. If she doesn't stop, take her outside and make her sit on the sidewalk or in the car until she stops. If she doesn't stop leave. Just remember, she's not embarrassing you, she's embarrassing herself. And DON"T YOU CRY IN FRONT OF HER!!! Tha shows she's won another round and makes you look really weak. What's going thru her head when you break down is, "WOW!!! I made mommy cry! I wonder if I can do it again?" As far as meals go, offer her whatever you want to. If she doesn't eat, that's her problem, not yours. She won't let herself starve. This is partly your fault because you've been her doormat for 2 years. But it is also just a simple matter of a VERY smart little girl who's figured out how to get her own way very effectively. Step up andput yuor foot down. It will be a struggle, the WHOLE way, but in the end you will have saved yourself from spoiling her.

Stir Fry Vegetables served over Rice (This was for a vegetarian, so add 4 cut-up cooked chicken breasts (sauted in a little oil) to this if you want)

Ingriedients:

2 cups cooked rice, any kind you like, white, brown, whole grain, whatever
2 bay leaves
1 teaspoon of dried sage
salt
black pepper to taste

1 cup sliced mushrooms, any kind you like, I use button mushrooms
1 cup broccoli florets
1 cup sliced carrots on the diagonal for prettiness
1/2 a yellow onion, chopped
1/2 a yellow bell pepper , chopped
1/2 a green bell pepper, chopped
1/4 cup red bell pepper, chopped
1 16 oz. can chunk pineapple
2 cloves of garlic, chopped, not minced
2 green onions sliced thinly on the diagonal

Directions:
Cook your rice according to package directions adding all the spices, and herbs
Saute in a wok, or large skillet, your vegetables, starting with the carrots, then mushrooms, as they take longer to cook. Add more oil if needed, salt as needed, and add each vegetable one at a time, depending on its cooking time. Towards the end of the cooking time, add the pineapple chunks. Turn off the heat. You want your vegetables to be crunchy, so cook them on a high heat, and fast.

The sauce (optional)

All the pineapple juice from the can
1 cup of vegetable broth, homemade, or canned
1cup white wine (if you dont want wine, increase the vegetable stock to 2 cups)
about a tablespoon of cornstarch with water

Simmer all the liquids in the same wok, or pan you used to cook your vegetables (this picks up the flavor of the veges) When the liquid starts to reduce, add your cornstarch and water mixture, until to the thickness you desire. If its too thick, add more wine, water or broth. Put your vegetables back in and stir-fry.

When the rice is done, stir in your sliced green onions, gently, and surround the outside of a platter, or large round plate with the rice (dont forget to remove the bay leaves). In the center pour your vegetable mixture, and add a garnish of chopped parsley, or cilantro.

i made up a veggie meddley -
i heat some cut up potatoes in the microwave - till they are pretty much soft
in a stir fry pan i add a little olive oil and brown the the potatoes. then i add broccoli, cut up asparagus, and whatever else i have (sliced carrots, cauliflower (hardly ever, not a fan), sliced red peppers, and when it's just about done, i add some cut up onions (red or white, whatever you prefer) and i sprinkle the stir fry with salt and peper (to taste). i think it's pretty good. real quick too.

Buy some ramen and pour the spice packet into your veggies instead of the broth ^___^

Make breaded cauliflower: dip each head into an egg/milk mixture, and then roll them in some breadcrumbs until completely covered (as if you're making breaded chicken). Serve with marinara sauce poured over it.

Try using herbs and spices on your vegetables. I used dill on cucumbers, steam vegetables for more nutrients and add any herb that suit your taste. Experiment on all the flavors out there. All can happen is you don't like it. I try to get a book on spices and herbs either at your grocery store or book store. Good luck

both asparagus and cauliflower are good baked with a little olive oil and salt and pepper (or other spices). Just cook them until their tender.
