Would it taste okay?

2 cups milk
1 cup coconut milk
1/4 cup cornstarch
1/2 cup sugar
1/4 teaspoon salt
1 1/2 teaspoons vanilla extract

Scald 2 cups of the milk. Mix cornstarch, sugar and salt; stir coconut milk. Add to scalded milk and cook over low heat, stirring constantly, until thickened and smooth. Continue cooking vanilla pudding for about 5 minutes to thoroughly cook cornstarch.

Cool vanilla pudding slightly; stir in vanilla and pour into serving dishes. Vanilla pudding recipe serves 6.

Sure it would be fine... coconut and pudding is the basis of many quick coconut cream pie recipes.

I would recommend adding the coconut after the pudding is done or close to being done.

Are you using fresh coconut or the bagged coconut flakes found in supermarkets? Either way... let the pudding cook, if you're making a cooked pudding and add the coconut at the last minute.

Certainly! Add coconut as the pudding starts to thicken. It tastes wonderful

I'd put it in after it's cooked, but ya, that's coconut cream pie filling...mmm
my mom would say "don't skimp on the butter."
