I just started molding chocolate candy/lollipops and have to save some for about a month, what is the best way to store/save it? I'm afraid if I put it tin the fridge it will ahve a matte color to it.

If your chocolate has quite a bit of wax in it (probably does for melting and moulding), it should be okay. I find that freezing chocolate can give an ashy look to it.

Whatever you do, consider making it as air-tight as possible: it's probably already wrapped but then store them in a plastic air-tight container, too. I'd say store it in a place that WILL NOT get hot and also out of the light.

Consider Fannie Mae chocolates and the stores who sell those things...they sit in there for longer than a month. If it's not moulded around something perishable, I think it will be okay as long as it's very air-tight and out of the heat/ sun.

Store your candy/'pops in an airtight container or a pan wrapped well with plastic wrap, & keep in a cool, dry place. Do not store chocolate in the 'fridge or freezer.....it will bloom & absorb any "odors" that are in the 'fridge or freezer. Where ever you store your candies make sure the temp. stays constant or doesn't fluctuate too much. This too will cause your chocolates to bloom.

wraping chocolate in plastic wrap with keep the glossy apperance. You do have to keep it tight. After that store in a cool dry place, the fridge or freezer.

Glass tupperware, with tightly shut lids, left out at room temperature in a dark place. Don't put them in the fridge, it will make the wax surface and be disgusting.
