I have never had Mexican food before and am trying it for the first time this weekend. Do you use a knife and fork or your hands?

depends on what you're eating -

for tacos, or tostadas... pretty much anything with a crunchy corn shell or with a flour tortilla wrapped around it... use your hands...

for enchiladas, tamales... and things with sauces poured over them as part of the dish... use your knife and fork.

Also, rice and beans are a customary side dish... sometimes it's really good to just use a tortilla to scoop the beans and rice up. (Try mixing them together.. it's great!)

Man, you really have been missing out if this is the first time you're eating Mexican cuisine. It's delicious!

It's just the same as any other food. It depends on what you are eating.

You would pick up a taco or fajita the same way as a hot dog. For something like a quesadilla, it can be cut with a fork and knife or if not messy, picked up. Nachos are usually picked off a shared tray. And chili con queso or other baked or cheese coated foods (enchiladas for example) are usually eaten with utensils.

I would not use a knife and fork when eating Salsa and chips. I, also, would not double dip when eating Salsa and chips. When eating a Fajita, it is ok to use your hands. Burritos also, but, if the burritos is covered with cheese sauce, I would think a knife and fork are necessary. A reasonable person would just look at the item and see what is appropriate. I cannot believe you have to ask this question.

Depends on exactly what you are eating. If your eating rice or vegetables, fork is fine. But it's pretty hard to eat a tortilla with a fork --- so you have to use hands there. Just use common sense.

Depends on the food. For enchiladads, beans, rice, or something equally messy, you would use a fork. For items that come prepared in their own wrapping, for instance, a burrito, taco, or tortillas, you would use your hands. For chips and salsa, your chip is basically the scooper. Enjoy yourself.

Depends on the food. For anything covered in sauce with the exception of nachos, it is appropriate to use utensils. For nachos, tacos and burritos (burritos should be wrapped in something which enables you to pick it up), you should use your hands. It's basically common sense, the food that requires utensils would be too messy to eat with your fingers.
