Quick Cabbage Rolls
The secret is that the cabbage isn't rolled at all!

1 pound hamburger
1/2 cup uncooked rice
1 egg
2 teaspoons garlic powder or 2 teaspoons ready minced garlic
1 teaspoon salt
1/2 teaspoon pepper
2 16 oz cans tomato sauce
1 medium head cabbage

Wash and core the cabbage, chop into 8 wedges and then cut each wedge in half across the middle. Mix hamburger with rice, egg, garlic, salt and pepper. Make meat into 2" meatballs. In large stock pot, put 1 cup water and 1 can of tomato sauce in bottom. Place a layer of meat balls in pan, cover with a layer of cabbage, seperating the cabbage leaves as you go. Repeat with meat and cabbage layers until done, Add rest of tomato sauce and additional cup of water. Add salt and pepper to pot if desired. Cover and bring to boil, reduce heat and simmer until cabbage is tender and meat is cooked through, Approx 20- 25 min.Check as the mixture cooks, you may need to add more water.

We serve some buttered french bread and a mixed green salad.

When I want the flavor of cabbage rolls in a hurry, I use two pkg of the cabbage already sliced for coleslaw.....Here's how.
2 pkg cabbage sliced for coleslaw (with carrots is okay)
1 # ground beef, or a combination of ground pork & ground beef, or even ground turkey, browned & drained well
1/2-3/4 C instant rice
optional--1 can whole kernal corn, drained well
1 medium onion, finely diced
1 tsp worcheshire sauce
1 tsp freshly ground pepper
1 tsp season salt
Now.... Combine the meat, rice, onion & seasoning. You will make three layers of cabbage, two layers of meat in a large casserole with tight lid--3 qt. is a good choice (or big electric fry pan). Put first layer of cabbage in first, take 1/2 the meat mixture & scatter over the cabbage. Next layer of cabbage & last of the meat. Cover with last cabbage layer.
Now, here is the sauce:
1-8oz can tomatoe sauce
1-14.5 oz diced tomatoes in juice, undrained
1-1/2 tsp sweet paprika
1-1/2 tbsp cider vinegar
2 tbsp brown sugar
water, as needed, or liquid from draining corn.

Combine the sauce ingredients, except the water & pour over all. You want the liquid to come up at least to the last meat layer. Cover tightly. Bake @ 350 for 45-50 minutes. Check after 25-30 minutes, and add more water, or liquid if necessary to bring liquid level up to last cabbage layer. Check @ 45 minutes to see if cabbage and rice are tender. This is good served with corn bread, or a nice whole grain crusty bread. It is even better the second day!

sorry but cabbage rolls take a very long time to cook you have to start them in the morning but here is a recipe

2 lb. ground beef
3/4 c. rice
1-2 lg. heads cabbage
1 med. onion

1 sm. can sauerkraut
Water

Parboil cabbage until supple - separate leaves using the largest, cutting off ribs. Cool. Cook rice and cool. Saute onion and green pepper in small amount of butter. Mix rice, sauteed mixture and seasonings into ground meat, along with 2 tablespoons tomato sauce. Roll cabbage leaves with 1 1/2 tablespoons ground meat mixture. Dice remaining cabbage head and layer bottom of pot with this and sauerkraut. Place cabbage rolls on top. Cover with soup and remaining tomato sauce. Add about 1 cup water. You can buy them frozen. Put them in a casserole dish, pour a can of tomato soup over top and bake in the oven as per the directions on the package. Or you can Google Lazy Cabbage Rolls - we loved these growing up!
You can serve cabbage rolls with almost anything; pork chops, steak, chicken, I would count them as your starch in the meal.

STUFFED CABBAGE LEAVES:
12 large cabbage leaves - cooked
1 1/2 pounds ground beef
1 cup cooked white rice
1 small onion - chopped
1 egg, beaten
1/2 teaspoon poultry seasoning OR thyme
2 teaspoon salt
1/2 teaspoon ground black pepper
2 Tablespoons oil
2 (8 ounce) cans Hunt's Tomato Sauce
1 Tablespoon brown sugar
1 cup water
1 Tablespoon lemon juice
Wash and place the head of cabbage in a large pot with water to cover. Cook over high heat. Boil cabbage over for 10 minutes, or until it is pliable and soft. Drain and allow to cool completely. Separate leaves and remove the hard outer vein from the leaves. In a separate large bowl, combine the beef, rice, onion, poultry seasoning, garlic powder and the egg, mixing well. Place a small amount, about 1/2 cup, into the center of a cabbage leaf and fold leaf over, tucking in the sides of the leaf to keep meat mixture inside. (Some people use toothpicks to fasten them) Heat the stuffed cabbages in oil of large pot or skillet, (I use an electric frying pan) putting any extra leaves on the bottom. Pour in the tomato sauce. Combine lemon juice, brown sugar and water. Stir into tomato sauce. Simmer covered, over medium-low heat for about 60 minutes.
Baste occasionally. (Keep an eye on them, making sure the bottom of leaves do not burn.)

I usually serve Mashed Potatoes and Carrots...

I dont have a specific recipe, mainly because I just throw it together, bit it goes like this:

ground beef (1 pound or so)
1 cup cooked rice of your choice (I prefer brown)
1 medium onion chopped
3 cloves garlic.
2 tsp olive oil
tomato sauce
salt (to taste)
pepper (to taste)

saute onion and garlic in oil for a minute or so. add beef, cook until no longer pink. drain oil. add 1/4 of tomato sauce stuff cabbage. top with tomato sauce. bake in oven, 350 for 15 minutes or so.

I usually serve some sort of potato with it, mashed potatos works well for a fast dinner

Sometimes I sub tomato soup for tomato sauce.

MMMMM...Cabbage rolls, I love them. What do you serve them with? Mashed Potatos, preferably real mashed potatos, not the ones from the box. You spoon the sauce from the cabbage rolls over the potatos like gravy, and viola! Dinner is served....

I dont use measurements but you can figure it out
2-3 lbs. ground beef I I make more than neeed for one meal
for left overs and you can freeze)
2 cups rice (I use instant) cooled
1 head of cabbage decored, put into boiling water turning cabbage until leaves fall off put on plate to drain and then cool. Mix rice with ground beef, pepper onion powder, garlic powder, oregeno and salt if you like. put meat mixture into leave dont ovger stuff roll that leaves can be tucked in on both ends, Place in a large pot cover with sliced onion strips, and whole tomatoes broken up. add spices totato sauce to cover them all
(I add about a can of water to them). Bring to a boil then simmer slowley covered for about 2 hours, check on them and more around gently so they wont fall apart. If you have extra meat roll in balls and put in the pot, extra cabbage tear up and put in. Mash potatoes a must, and rye bread and butter great for dunking....
Left overs try with egg noodles......
