My favorite Brazilian Jiu Jitsu submission is the mate leon(potugese for lion killer. In america most people call it the rear naked choke. I myself prefer to use the traditional name. I get excited to see someone get their gaurd passed, mounted, and then hit with a few punches until they roll over and give their back which results in choke out.

I'm starting to like the triangle choke a lot but I think it's hard for me to pick a favorite. I really love all sorts of submission moves.

As a fighter my favorite submission is the armbar, very easy to execute from various positions and I think it is very underutilized in the UFC, many fighters who prefur to GnP miss out on tons of armbar situations.
But to watch I love to see hard to pull off submissions such as the flying scissor heel hook performed by Ryo Chonan against Anderson Silva or more recently the gogoplanta executed by Shinya Aoki against Joachim "Hellboy" Hansen at Pride Shockwave 2006

I'm kind of a skinny guy, with a lot less upper body strength than leg strength. Because of this, I tend to stay away from guillotines, naked chokes, and other movements that if you have a skilled opponent, can cause you to become tired very quickly. Probably my favorite move is a leg triangle choke.

Can Opener is usually banned in MMA though. I perfer more hard to come by submissions such as the gogoplata, omoplata, and anaconda choke.

Arm bar or rear naked choke.
I think the anaconda choke is pretty awesome too, but you don't see it much.

The Kimora is definitely my favorite. You can pull off a Kimora in a number of positions - standing, full guard, half guard and side control!
