My mom makes a German version and adds bacon to mayo, potatoes, salt, pepper, and vinegar.
I also love a sketch from "The Kids in the Hall" - Bruce McCullough is dressed as a woman and she makes potato salad - it's cute.

There is a terrific recipe on the back of some of the Best Foods mayonnnaise jars. I don't have it with me, but I remember that it has a few tablespoons of white or apple cider vinegar over the potatoes before you add the mayonnaise and other ingredients. It gives it a pleasant, but no-too-strong tang. Whenever I bring it to potlucks, etc., it is always a success. The Best Foods website might have the recipe.
If you are looking for a less tradional potato salad, you could dress the potatoes with a vinaigrette (extra virgin olive oil, vinegar of choice, herbs/spices). Sometimes I add capers, but many people aren't too fond of them. Chopped red onion is a nice addition to both the mayonnaise and the vinaigrette styles. Kalamata olives are particularly good with the vinaigrette style.
Really, you can use anything you like, from traditional to exotic ingredients. I do find, however, that in being creative, keeping the list of ingredients smaller makes for a better salad. Also, people are very attached to certain styles of potato salad, so keep the tasters in mind.
One last note: I think potato salad always tastes better after it has been in the fridge for more than 12 hours.

My mom makes the best potato salad! Her ingredients are the basics: potato, boiled eggs, mayo, salt, black pepper
To that, she adds frozen veggies ( like something from Green Giant) that have been boiled for about 2-3 minutes so that they are warmed through and finely chopped onions and garlic.
It's THE BEST!

Diced boiled potatoes, boiled eggs that I crush with a fork (the yolk still a bit runny), tuna, mayo, mustard, salt, grinded coarse black pepper, boiled french green beans cut in pieces, black olives, corn with pepper pieces, sesame and poppy seeds, and a dash of olive oil (truffle infused is top!).

GREAT AMERICAN POTATO SALAD
1 cup Miracle Whip Salad Dressing
1 teaspoon mustard
1/2 teaspoon celery seed
1/2 teaspoon salt
1/8 teaspoon pepper
4 cups potatoes, cooked and cubed
2 boiled eggs, chopped
1/2 cup onion, chopped
1/2 cup celery, sliced
1/2 cup sweet pickle relish
Combine salad dressing, mustard, celery seed, salt, and pepper; mix well.
Add potatoes, eggs, onion, celery, and pickle; mix lightly. Chill. Makes 6 servings.
Serving Size: 6

Italian (the way my gram makes it) - red skin potatoes, olive oil, red wine vinegar, onion, celery, fresh italian parsley - this kind can be left out since there is no mayo
