Kosher has nothing to do with being "all meat". And obviously a pork casing would absolutely invalidate the kosher of a product. And I don't think anyone would ever pack kosher sausage meat into a pork casing. Kosher sausage would only be prepared in a kosher processing area. The meat and all spices would only come from valid kosher sources. The meat would have to be slaughter properly by a kosher butcher. All the equipment for grinding the meat would have to be clean and never used for meat that was unkosher.

Unless you see a kosher certification mark on the package it is not kosher. Any package that you do see a kosher certification mark on does not contain any pork - even in the casing.

It may be "kosher" by preparation, but it's not edible by anyone of the Jewish faith as pork is listed as an "unclean" meat.
