Boston Baked Beans

450 grams small haricot beans
225 grams fat bacon in one piece
60 grams brown sugar
1 tablespoon black treacle or molasses
½ teaspoon mustard powder
1 tablespoon smoked paprika
salt

Soak the beans for 12 hours (or overnight) in cold water. Drain and cover them with fresh water. Simmer till the skins are soft – they should burst if blown on.

Cut a slice from the bacon and put it in the casserole. Cut the rind off the rest of the bacon and cut the bacon into pieces.

Put the beans in the casserole with the bacon, treacle, mustard, paprika, mustard and salt. Put the bacon rind on top.

Cover the beans with boiling water and put on the lid. Cook in the oven for three hours at 160C. Check along the way and top up the liquid if necessary.

Boston Baked Beans
1 lb (450 g) dried white haricot beans
1 level teaspoon English mustard powder
2 level tablespoons black treacle
2 level tablespoons soft dark brown sugar
2 level tablespoons tomato purée
2 cloves garlic, peeled and crushed
1 onion, peeled and sliced
1 bay leaf
12 oz (350 g) streaky belly of pork, in one piece
salt and freshly milled black pepper

Measure 3 pints (1.7 litres) water into a large saucepan, add the beans, bring to the boil and boil gently for about 2-3 minutes; then remove the pan from the heat and leave on one side for about 1 hour, or until the water has cooled. Now return the beans to the heat and simmer uncovered until the bean skins burst when you lift them out of the water (which will take around 45 minutes).

Drain the beans next, reserving the liquor, then measure the liquor and make it up to 1 pint (570 ml) with water if necessary. Transfer the beans to a casserole and pre-heat the oven to gas mark ½, 250°F (120°C). (For important information about cooking at gas mark ½, click here)

At this stage, blend the mustard powder with a little of the measured bean liquor, followed by the black treacle, sugar, tomato purée and crushed garlic, and pour this mixture over the beans, along with the measured pint (570ml) of liquid, some seasoning, the sliced onion and a bay leaf.

Now cut slashes across the pork (approximately ½ inch/1 cm apart) and bury the meat in the beans until only the rind is showing. Then cover the casserole tightly and bake very slowly for about 6 hours. During the last hour of cooking, take the lid off the casserole to allow the rind on the pork to crisp a little. Also, keep stirring the beans during this last hour and, if they show signs of getting too dry, add just a spot more water. Serve very hot.

I can't imagine baked beans with haricot vert(which are green beans)

Anyway here is my recipe. The bacon should be cooked. This way the grease does not go into the baked beans.

1 large can of pork and beans
1/4 cup of brown sugar
2 TB of yellow mustard
1/2 chopped onion
1/2 bell pepper chopped
1/4 cup of ketchup
1 TB of bbq sauce

topping:
1 TB brown sugar
6 slices cooked bacon

Mix first set of ingredients. Place in a casserole dish. Lay bacon on top and sprinkle brown sugar over.

Bake at 350 for 45 minutes.

Baked Beans

Makes 8 servings

Ingredients:

1 14 ounce can baked beans, drain off most of the liquid
1 14 ounce can lima beans, drain off most of the liquid
1 14 ounce can kidney beans, drain off most of the liquid
1 teaspoon Worcestershire Sauce
1 each onion, medium chopped
4 slices bacon
1/4 pound American cheese, grated
1/2 cup ketchup
1/2 cup brown sugar

Preparation:

Brown the bacon and dice into small pieces. Discard all but 2 tablespoons of the bacon fat and brown the onions lightly in the fat. Mix with all the other ingredients and bake for 45 minutes in a preheated oven of 350 degrees.

1 pkg.small white navy beans
1 lb. chourico red wine vinegar
1 onion chopped
1 16 oz. can tomato sauce

Soak beans overnight. In meanwhile cut chourico in small chunks and marinate in wine overnight. In the morning, rinse the beans & out then in a pan big enough to cover them, add the onion chourico and cover with water. Bake at 350% for 3-4 hours or until they are cooked. Remove them and add tomato sauce or if you prefer, add ketchup until it is to your desire look & taste. Put them back in the oven until all the liquid is absorbed, about 45 min. Check on them. You can also do this in a crock pot, them put them in the oven to brown.

Navy beans with molasses, a little mustard or mustard powder, brown sugar, salt, pepper and some people use bacon or some other pork fat to flavor it as well. I know those are the basics, but I am looking for a really good recipe myself.
