There are items that you can write off if you have a legitimate business operating. Just having an EIN does not mean that you have a business.

No, anyone can get an EIN. Having an EIN does not qualify you to take any deductions.

Go to IRS.gov and get a copy of the "tax guide for small business". This is the best free source that I know of.
