they want to see what color it is...or how chunky...or if they are planning to eat them

It isn't just from picking their boogers that people check them out. It also is when they blow their nose.
It is actually a good idea to look at it. Sometimes you can find some sort of a clot (lilke you had a bloody nose and didn't know it) and just blew it out. ALso, sometimes it can be hard, sometimes just yellow or green from infection. It is smart to see what is up there, so you can know whether or not you are getting sick. If you are, you can do things to help prevent the sickness.

Well, they look at it because they want to examine what comes out, no usually boogers are sticky and difficult to just flick away, you usually have to wipe on a tissue, the next time you see someone examineing what they picked out, you can always ask them if they pulled a diamond out of ther nose.

Sometimes boogers have different colors: green, dark green, light green, a little red, and if it's yellow.. ouch! look out.. someone is sick!

Probably for the same reason why people look at their toilet paper after wiping. Probably to make sure everything looks normal.
