The rule of thumb is to cook the fish for 10 minutes for every inch of thickness, no matter what method of cooking you use. When you flake it with a fork, it will have lost the translucent look in the centre and be an opaque white. If the edges are hard and dry, it is overcooked. Fish has very little connective tissue, so it cooks very fast.

Of course it will change color. It will not be as "opaque" any more. It will be a truer white than what you started with. If you stick the tines of a fork in the fish and just ever so slightly twist the fork the fish will "flake". At this point it is fully cooked.

Fish will flake easily with a fork when done. All fish doesn't take very long at all to cook. Depends upon thickness. Most fillets will cook in 10 min. or less, as I stated, depends how thick it is.
If using breading and pan frying, do it on a medium heat so the breading will not burn till the middle is done.

The color doesn't change but the texture will.
First, it will be flaky all over.
The center should be a slightly different color (it will continue to cook when you turn the stove off).
If the edges dry up and curl, the fish is overcooked.

When you stick a fork in it and the fish will pull apart, then it is done. If you stick the fork in the middle of the fish and it is squishy or hard to get the fork through the the top layer, it is not done yet.

It doesn't take long when fish is cook to perfection, the result is delicious white or pink opaque flaky flesh that separates easily.

when it change color to a darker color. for example raw salmon is light pink you know when it is cooked good it will change from light pink to a dark orange
