4 Servings
1 tbsp vegetable oil
1 onion, coarsely chopped
1 clove garlic, minced
2 cans (141/2 ounces each) reduced-sodium, fat-free chicken broth
11/4 pound carrots, peeled and coarsely chopped (4 cups)
1/2 tsp dried thyme, crumbled
1/4 tsp salt
1/4 tsp white pepper
1/4 cup plain low-fat yogurt
1 tbsp finely chopped dill
1. In medium saucepan over medium heat, heat oil. Add onion and garlic. Saute until softened, 5 minutes. Add broth, carrots, and thyme. Simmer, uncovered, until vegetables are very tender, about 40 minutes.
2. In batches, puree soup in blender. Add salt and pepper. To serve hot, ladle into bowls and garnish each bowl with yogurt and dill. To serve cold, remove from heat and let cool to room temperature. Cover and refrigerate until cold. Garnish just before serving.

1 small onion, finely chopped
2 carrots, peeled and finely chopped
2 celery stalks, finely chopped
1/4 cup tomato paste
2 cans (141/2 ounces each) reduced-sodium, fat-free chicken broth
1 bay leaf
1/2 tsp dried thyme, crumbled
1 can (15 ounces) solid-pack pumpkin puree 1/4 cup half-and-half
1/4 tsp salt
1/4 tsp white pepper
Sliced lime and chopped coriander, for garnish (optional)
1. In large saucepan over medium heat, heat oil. Add onion, carrot, and celery. Saute until softened, 5 minutes. Stir in tomato paste. Cook 1 minute. Add broth, bay leaf, and thyme. Simmer, uncovered, until vegetables are very tender, about 30 minutes.
2. Stir in pumpkin. Cook 5 minutes longer. Remove bay leaf.
3. In blender or food processor, puree soup in batches. Pour soup back in to saucepan. Add half-and-half. Bring to a simmer. Add salt and pepper. If too thick, add a little water. Garnish with lime and coriander before serving.

This is easy! Take 4 chicken thighs and pull the skin off them. Put into boiling water (about 8 cups) cover and cook over low heat. After 2 and 1/2 hours, remove the thighs from the pot, set aside. Put a few of your favorite vegetables into the pot. Examples include, canned tomatoes, carrots, green beans, celery, and onion. (You can also use per-cut and frozen to make this faster). Add a little salt, pepper and sage to taste.(or your favorite mix of spices) Keep the pot on low and cook the vegetables. Using a couple of forks, remove all the bones from the thighs and place the meat back into the pot with the vegetables. Cook the soup with the lid on until the vegetables are tender. Check to see if you need more seasoning. Eat this soup with a piece of whole grain bread and a salad and drink. Afterward, place the soup into single serving containers for quick and easy meals. The longer this soup sits, the better it tastes. Sometimes, instead of chicken, I use turkey Italian sausage.

Those healthy choice soups and Campbell's soup, any kind of type that is all natural is good for me. As someone mentioned before, weight watchers are some recipes. On the food network website, they are some healthiest soup recipes. I like tomato and basil soup that's good for you. Vegetable soup is good for you. Good Luck!

Cabbage soup...basic ingredients: 2 garlic cloves chopped, 2cans fat free chicken stock, 2 large cans V-8 juice, 1 large can stewed tomatos w/basil, 1bunch green onions, 2 green peppers
(decently large size), juice from 2 lemons to equal 1/2 c., use any type of chili peppper you like, I prefer 2 lrge jalapenos w/seeds removed from only 1, 2 cups juliene cut baby carrots final ingredient is 1head of green cabbage. In lrge pot use just enough oil to brown garlic & develop flavor then add chicken stock, V-8 juice, stewed tomatos, lemon juice & bring to a boil then add green onions, green peppers, chili peppers & carrots. Chop cabbage & add once other veggies are tender. Season w/salt & pepper to taste. Eat for 1 or 2 meals a day. Delicious!!!

Chicken tortilla soup:
All 8-12 oz cans:
1 can low fat or fat free Cream of chicken soup (campbells)
1 can Swanson Chicken stock
1 can organic pinto beans (drained)
1 can organic black beans (drained)
1 can green enchilada sauce ( try to get Las Palmas)
1/2 cup of water ( I prefer distilled for cooking)
Heat for 10-15 minutes.
Cut up fat free corn tortillas in strips (I like cutting them so they're about the size of extra wide egg noodles)
heat tortillas in microwave 20-30 seconds depending on your micro.
Add tortillas into individual bowls ( not into the soup pot, they'll get too mushy), and top with cheese, I recommend colby jack (low fat, fat free, whatever)
Additional touches if you wish:
Chopped cilantro, chopped tomatillo, a squeeze of lime
voila! :)

In the superstore, fruits are usually selected much too soon. Some are rocks, many are bitter. Some of the fresh vegetables are typical right (zucchini, onions, garlic, lettuce, greens, and a few others) so I'd have to go with vegetables.
