Hi. I'm a cheeseteakohoic, and love to make them at home. I'm also a cooking dum dum. I'm tying to quit using steak-ums, because they're just nasty. Can I get some sort of very thinly sliced steak at the deli, or will roast beef also work? Please pass on your tricks. Thanks!

Use sirloin. Pound flat and roll up. Place in freezer to chill (should be firm but not frozen) Slice 1/8 inch thick.

Just go to your local deli and ask if they have thin-sliced steak, and if they don't ask if they can slice steak thin for you. Roast beef is not a good alternative, because it has a very different taste then steak when it's heated.

in most supermarkets they sell shaved steak in the meat department. if you have a good local deli they will slice it fresh. that is what i use for cheese steaks and it comes out great. i think that the trick is using two spatulas to manipulate the steak on the griddle,
