I can assure you my muffins are light and moist - i make six dozen everyday for the breakfast run, and could sell three times that amount! But i won't bake the night before because i like to sell 'em really fresh

One of the nicest muffins I ever had was double choc chip but with a great big dollop of cream cheese baked in the middle. I safely carried it all the way from New York back home to the UK so didn't even know it was going to be so yummy until I was home!

Please just keep on baking muffins but make sure they are moist.

Some people bake dry muffins and they are bleachhhh. Thank god for coffee, else we would choke.
There are some muffin shops that make combinations such as cheddar and walnuts, chocolate chips and yellow sultanas, whole cranberries with white chocolate chips. banana and walnuts or banana and almond slivers-- and they are quite expensive.

Lemon and poppy seed is nice - put a couple of tablespoons of poppy seeds and the grated zest of a lemon in with your usual muffin mix. Use the juice of the lemon you used to mix with cream cheese and icing sugar for a lemon cheese frosting.
