These is a great recipe which might interest you....

~~~~~~~~~~ Southern "Fried" Chicken ~~~~~~~~~~

Prep: 10 min / Cook: 30 min

1 cup low-fat (1.5%) buttermilk
1 tbsp honey
1/2 tsp each cayenne pepper and salt
1/4 tsp black pepper
4 skinless, bone-in chicken breasts (8 ounces each)
1/2 cup flour
1 tbsp vegetable oil

1. In a large bowl, whisk together the butter milk, honey, cayenne, 1/4 tsp of salt, and the black pepper. Add the chicken, turning to coat. Cover and marinate in the refrigerator for at least 30 minutes.

2. Preheat the oven to 400 degF. Lift the chicken from its marinade and dredge in the flour, shaking off the excess. In a large nonstick skillet, heat the oil over moderate heat. Saute the chicken, bone-side up, for 4 minutes or until golden brown. Turn the chicken over and cook for 3 minutes. Transfer to a baking sheet lined with foil and bake, bone-side down, for 20 minutes or until the chicken is cooked through. Sprinkle with the remaining 1/4 tsp salt. Serves 4.

A few simple things:

1. Brine the chicken in a Salt/ Sugar solution w/ water. This will Make the Chicken juicy.
2. Marinate it in buttermilk for a few hours. This gives the chicken a little acidity and a little tang.
3. Before Frying the chicken, add a 1/2 an onion to the oil and fry that. This will impart a great flavor to the chicken as well.
4. Make sure when you fry it, the oil is HOT. Also, coat the chicken with Wondra flour...gives it a nice crust. As soon as you put the chicken in the oil the temperture will drop. If the oil is not hot enough when you add it, the chicken will absorb a lot of oil when the temp drops thus making the chicken greasy. Buy a thermometer and make sure that the oil is the right temp!

House Seasoning:
1 cup salt
1/4 cup black pepper
1/4 cup garlic powder


Southern Fried Chicken:
4 eggs
1/3 cup water
1 cup hot red pepper sauce
2 cups self-rising flour
1 teaspoon pepper
House Seasoning
2 1/2-pound chicken, cut into pieces
Oil, for frying, preferably peanut oil



To make the House Seasoning, mix
ingredients together and store in an
airtight container for up to 6 months.

In a medium size bowl, beat the eggs with
the water. Add enough hot sauce so the egg
mixture is bright orange. In another bowl,
combine the flour and pepper. Season the
chicken with the House Seasoning. Dip the
seasoned chicken in the egg, and then coat
well in the flour mixture.

Heat the oil to 350 degrees F in a deep
pot. Do not fill the pot more than 1/2 full
with oil.

Fry the chicken in the oil until brown and
crisp. Dark meat takes longer than white
meat. It should take dark meat about 13 to
14 minutes, white meat around 8 to 10
minutes.

Season: Salt, pepper, parley. Get 3 containers. In one you will beat 1 or 2 eggs depending on the amount of chicken you will use. On the other you will have flour (I use either wheat flour or Presto). Do not season the chickes first, coat it in the egg, season it, and then roll it in the flour. (Use one hand for the egg and to pass it to the flour, and the other hand to coat it and place in the 3rd container before frying, that way you wont make a mess on the flour)

As long as the chicken is cooked, dont fry it for too long and when you take it out of the frying pan place it over a napking to make it less oily. The oil? I use a mix of Canola 2/3 and Peanut oil 1/3.

If you dont mind making a bit more of a mess you can double coat your chiken to add crispyness.

Soak cut up chicken in brine for at least 30 minutes (salt water) in fridge.
season flour wih salt pepper onion power and garlic powder.
The wet will be buttermilk.
Dredge chicken in milk, then in flour, back in milk and flour once more...set on a sheet to semi-dry out.
Heat 1/3 pan of oil (peanut) to 375 degrees...Carefully place chicken in pan and watch your temp....it should fall to about 360.
Cook until done and enjoy. BEST IN THE SOUTH!

Put egg, flour and milk in a bowl and mix it. dip the uncooked chicken into the mixture and fry in thick oil until golden brown.

first buy good chicken, organic free range. from a reputable busy chook shop. marinate with olive oil/salt/pepper 2 hours. dust with seasoned flour, shallow fry low heat in skillet with lid on till nearly cooked, then take lid off and turn to brown all over. drain on kitchen paper, sprinkle with fresh herbs and lemon wedges or good balsamic

1) put some flour in a dish
2) put some yolks in a dish and mix them (a different dish from the flour one)
3) in a different dish put some bread crumbs
2) put the chicken into the flour, then into the yolks and finally into the bread crumbs.

put some oil into the pan and as soon as it is hot put the chicken into it!

i like to soak my chicken in buttermilk overnight, for my seasoning i use all purpose flour paparika and cinnamon with a dash of salt and pepper. dip chicken in flour mix and fry as usual.

make sure you take the temperature of the oil you're cooking it in [350 degrees usually].
and also try not to crowd the pot with chicken because it lowers the oil temperature and makes the chicken less crunchy.
