Pancakes with Orange Honey Butter

1 3/4 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 1/2 cups buttermilk
3 eggs, lightly beaten
2 tablespoons vegetable oil
1 tablespoon honey
1/2 cup butter or margarine, softened
1/3 cup honey
2 tablespoons orange juice concentrate

In a mixing bowl, combine flour, baking powder, baking soda and salt. Combine buttermilk, eggs, oil and honey; add to dry ingredients and mix well. Pour batter by 1/4 cupfuls onto a lightly greased griddle; turn when bubbles form on top of pancakes. Cook until second side is golden brown. For orange honey butter, combine butter and honey in a medium bowl; beat well. Stir in orange juice concentrate until smooth. Serve with pancakes.

1/4 cup shortening, melted
DIRECTIONS
In a small bowl, combine the flour, sugar, baking powder and salt. Combine the egg, milk and shortening; stir into dry ingredients just until moistened.
Pour batter by 1/4 cupful onto a greased hot griddle. Turn when bubbles form on top of pancakes; cook until the second side is golden brown.

There are some excellent pancake mixes on the market.
Here is an excellent tip:
Subsitute the milk required with club soda.
Yes Club soda!
It will make you pancakes rise on the griddle and produce on of the lightest pancakes on earth...People will want your reciepe.

mix 4 heaped dessert spoons plain flour with 2 of self raising and 1/2 cup water add 1 spoon of sugar and beat in 1 egg. Heat pan with a little oil pour in thick or thin (as you like it but taste better thin) on very low heat turn when cooked through and just a little brown ;cook on both sides turn out on dish sprinkle with sugar and lemon juice and enjoy cook rest of mix and stack spinkling & juicing each layer as you go

mix it up and cook it, thou it would be nicer if you could add some milk, eggs and berries
