It is like a small dish to keep you busy while you wait for the main dish (your main meal).

In some societies where people sit and eat in more formal settings there are many courses prepared and delivered to their table.

Way back in history the rich would sit for hours eating and eating many many dishes.

Each group of people depending on their income and traditions ate accordingly on down the the poorest.

Each one of these groups could have an "appetizer".
This is served as a "little taste" before the main dinner is served to everyone. It gets the appetite in gear to eat what is coming next the main entree.

Here are some appetizers that many have to eat before they are served their dinner.

cheese
crackers
soup
small bites of fish like shrimp
cut up small raw vegetables to dip in sour cream with herbs

if the dinner is for a large group of people they usually walk around and chat while eating these appetizers....before they sit at the dining table.

The poorest of the poor could also have this....like while the mother is preparing the main dish the pot of soup she might serve her family a "slice of bread with butter and honey " while they are waiting for the soup to be served.

What is a appetizer to one group can be the main dish for the other group!

Food served before the main course so that you won't be too hungry waiting for the main course. It also serves to stimulate your appetite. Go figure.

Sometimes sour but mostly salty and savoury. Seldom sweet.
