I'd forget spaghetti for a first timer, too messy and fiddly you want something easy - buy a chicken, a bag of ready-washed salad and two baking potatoes

Get it home, unwrap chicken, wipe it with kitchen paper, put in roasting tin and for about a 3 lb one in weight, put in a pre-heated oven (that means put the oven on to warm up first) to gas mark 5, or around 200 degrees and cook for about 1 and a 1/2 hours.

To check it's cooked, stick a small knife into the thigh, if the liquid that comes out is clear, it's cooked. If it's pinkish and bloody, put it back in the oven for another 15 mins, then try again.

scrub potatoes, (but leave the skins on) stab with a knife and put in the oven on shelf under potatoes.

When cooked, cut a cross in the top of spuds, squeeze, add butter - serve with salad

Any nice crisp white would go with chicken, Chianti, Chardonnay, white burgundy, soave good luck!

Buy 2 really good frozen dinners.Dont buy the cheap stuff. Buy things that say gourmet , have nice pictures, and something she likes. Read the instruction, follow to the letter. Cook in the microwave.

Put the food in the best plates you can find. Remember that presentation is everything.

Put a tablecloth, arrange the cutlery. Bring out the best wine glasses, even if you are only serving orange juice.

Dress nicely yourself.

Go to the grocer and get a meal from the frozen section. Get ready made salad. Stop at the liquor store and get the wine; the person at the counter should be able to assist you in a selection. Go online for tablesettings and set your table. Buy a boquet of wildflowers for centerpiece. Tell Girlfriend that they are hers. Light a couple of candles. Enjoy a relaxing meal and opportunity to sweet talk your girl.
Don't forget to stop at the bakery and get individual desserts.
Bon appetit!

Ingredients for the sauce (serves six)
500g beef mince
650g onions
4 400g tins of chopped tomatoes
200g tomato concentrate
8 tablespoons olive oil
2 teaspoons salt
1 teaspoon pepper

Ingredients for the spaghetti (serves six)
1 kg spaghetti (decent stuff such as Barilla, De Cecco, etc.)
7 liters water
two tablespoons olive oil
one teaspoon salt
two tablespoons butter
freshly chopped basil
freshly grated Reggiano parmesan cheese

Preparation
Chop the onions - not too finely. Press the garlic. Pour olive oil into a large saucepan, add the onions and fry them in the olive oil until they change colour. Now crumble the mince into the onions and fry it until it is completely done (no red bits left). Continue frying the mince and the onions while styrring to let some of the water that has accumulated evaporate. When the mince is nice and crumbly, pour in the red wine.

Now add the tomatoes, the tomato concentrate, the honey and the spices. Let the whole lot simmer for an hour with no lid on the saucepan - we want the sauce to reduce to get rid of some of the water - that will make it tastier.

Preparing pasta
Allow roughly 200g of pasta per head (for the very hungry) - a normal portion is around 150g. Boil a lot of water (1 liter per 100g), add some olive oil and salt. When the water is boiling, add the pasta. I normally use a timer to keep track of the cooking time (check the pasta package) - tends to be 10 - 12 minutes for spaghetti. Check at the lower end of the cooking time to see if they are "al dente". Now put out the whole lot into a colander which you have placed in your sink. Turn on the cold water and rinse the spaghetti under the water (while they are still in the colander). Put the saucepan back onto your hob and add 2 tablespoons of butter. Melt the butter. Put the pasta back into the saucepan and heat it up while turning it until it's hot. The pasta will taste great, not stick together and be just right!

2 tablespoons oregano
two cloves of garlic
1 tablespoon honey
1 teaspoon paprika
one glass (125ml) red wine
one splash of worcester sauce
1 teaspoon sambal oelek (hot chilli)

If you can, get hold of a bit of real parmesan cheese (my brother Gerhard recommends Reggiano) and grate it yourself - it tastes a lot better. And of course a glass of red wine!

Wine: Brunello di Montalcino from Tuscany or Brunello di Montalcino Poggiarellino

Post lunch you could both share an Olive Sandwhich.
For the olive salad:
1/4 gallon large pimento stuffed green olives, slightly crushed and well drained
1/2 quart jar pickled cauliflower, drained and sliced
1 small jars capers, drained
1 whole stalk celery, sliced diagonally
2 large carrots, peeled and thinly sliced diagonally
1 small jar celery seeds
1 small jar oregano
1 large head fresh garlic, peeled and minced
1/2 teaspoon freshly ground black pepper
1/4 jar pepperoncini, drained (small salad peppers) left whole
1/2 pound large Greek black olives
1 /2 Jar cocktail onions, drained
Combine all ingredients in a large bowl or pot and mix well. Place in a large jar and cover with 1/4olive oil and 1/4 Crisco oil. Store tightly covered in refrigerator. Allow to marinate for at least 24 hours before using.

For the sandwich:
1 round loaf italian bread
1/4 pound mortadella, thinly sliced
1/4 pound ham, thinly sliced
1/4 pound hard Genoa salami, thinly sliced
1/4 pound Mozzarella cheese, sliced
1/4 pound Provolone cheese,sliced
1 cup olive salad with oil
Split a muffuletta loaf or a loaf of Italian bread horizontally. Spread each half with equal parts of olive salad and oil. Place meats and cheeses evenly on bottom half and cover with top half of bread. Cut in quarters. Enjoy!

Pasta is a good choice. Relatively easy to make. Cut corners and use ready make stuff like sauces and pasta. Really research the techniques involved and make a true effort. It really is the thought that counts.

I hope that helps.

pasta primavera, a light dish with linguine and a fresh tomato sauce with vegetables and herbs. Add a tossed green salad, some great bread and try a glass of pinot grigio or two
