Cinnamon Bread

1/2 cup oil
2 cups sugar
2 eggs
2 cups buttermilk
2 teaspoons baking soda
4 cups all-purpose flour
1/2 cup sugar
2 tablespoons cinnamon
1/2 teaspoon salt

Preheat oven to 350 degrees. Spray two loaf pans with non-stick cooking spray.
Mix together oil, sugar, eggs, buttermilk, baking soda and flour in large bowl. Pour 1 cup of the batter into each prepared pan.
Combine sugar, cinnamon and salt in a small bowl. Sprinkle half the sugar mixture over each pan; pour remaining batter equally between pans. Sprinkle remaining sugar mixture over batter.
Using a knife, swirl through batter. Bake approximately 1 hour, or until a knife inserted in center comes out clean. Cool 10 minutes, then remove from pans and place on wire rack. Slice bread when completely cooled.

Cinnamon Bread

1 cup milk
3/4 cup water
1/3 cup butter or margarine
6 1/2 to 7 1/2 cups flour
6 Tablespoons sugar
2 additional Tablespoons sugar
1 Tablespoon salt
1 package yeast
3 eggs at room temperature
1/2 cup sugar
2 teaspoons cinnamon (one for batter and one for topping)
2 additional Tablespoons butter or margarine -- melted or very soft (for topping)
1 egg white

Combine milk, water and 1/3 cup butter in a small sauce pan. Heat over low heat until liquids are very warm. Butter does not need to melt.

Place 4 cups flour in a bowl with 6 tablespoons sugar, 1 teaspoon cinnamon, salt and yeast. Mix well. Add eggs and warm liquids, mix and knead. Knead in remaining flour.

Place in a well greased bowl and roll to grease top. Let rest covered until dough doubles in size.

Punch dough down and Davide in half. Shape halves into loaves and place in well greased pans, let rise until doubled in size.

In a small bowl, combine 2 tablespoons white sugar, 1 teaspoon cinnamon and 2 Tablespoons butter (or margarine), mixing until crumbly. Sprinkle topping over batter.

Bake at 375 degrees for about 35 minutes. Test with a toothpick to be sure bread is done. When inserted it should come out clean.

Remove from pans and brush all surfaces well with shortening or cooking oil.

I always toast bread, put soft butter on it and sprinkle with a combination of cinnamon and sugar. It passes the kid test, they ask for more.
