I would imagine that it is food that makes you have gas, such as potatoes, eggs, green vegetables, cheese, pizza, etc.

It's usually overpriced because it's had so many chefs planning, writing the menu and overseeing the production. There's not much difference between a gastro pub and a good restaurant. I suppose it depends on whether you prefer a more informal setting for your meal.
