I believe that everything that Christ did was to start a conversation with others around him. Yes, maybe in mark 2.23 they were picking grain to eat and that was considered wrong because it was sunday and it looked they were working. But it got others around him talking and that was what he wanted.

Did you not finish the chapter?.... 27 And he said unto them, The sabbath was made for man, and not man for the sabbath:
28 Therefore the Son of man is Lord also of the sabbath.
Okay...Now for some reason you consider it a contradiction that he fulfilled the law according to Mathew 5:17-18 and did not obey the law in Mark 2:23...I would suppose you have trouble understanding what fulfill means? Many laws were and actually all were if you understand, shadows of the things to come, We no longer sacrifice animals because the sacrifice they represented has come. The Sabbath represents God's Rest...His kingdom on the earth...The day of the lord. Understand that this Sabbath by faith we have entered therefore we do not practice this law that has been fulfilled as if the atonement was of no effect. The Sabbath was a covenant of salvation...It was to demonstrate that we are sustained by God. Jesus is that salvation he is the Sabbath.

If you lump all the Jewish laws together then yes He contradicts Himself, but if you take into account the law He speaks highly of is the law that came straight from God and the law that He freely broke was the ones that were handed down by the men.

As the Messenger of God, He can abrogate the laws of the previous Messenger and establish new laws to raise man to a higher level of civilization. Obedience to the divine laws promulgated by the new Prophet is obligatory to all men.

Mat5:17 Think not that I am come to destroy the law, or the prophets: I am not come to destroy, but to fulfil. 18 For verily I say unto you, Till heaven and earth pass, one jot or one tittle shall in no wise pass from the law, till all be fulfilled.
Mk 2:23 And it came to pass, that he went through the corn fields on the sabbath day; and his disciples began, as they went, to pluck the ears of corn.
We are talking about the Lord of all here!!

the law was needed, but when he fulfilled the law, it was to replace it with a new law, butr nobody follows it, they just give it lip service.

The bible is full of contradictions. "Eye for an eye" here, "turn the other cheek" there, "Love your enemies" here ,"Thou shalt not suffer a witch to live" there, I'll be damned if I can sort it out. And apparently, I'll be damned if I can't.
