Honey is already quite thick with the sugars glucose and fructose. So thick infact that over time it drives off the remainder of the water.
To restore to its orginal viscosity, add a very small amount of water and mix it in. repeat that process until its back to normal. heating up the honey may help in the mixing process

Pure honey goes through filters and is heated slightly. This gets rid of a lot of pollen, but also little bits of wings and legs and other debris. Raw honey isnt messed around with like that, it has more pollen which is great for allergies if it is a local honey. Raw honey is also thicker, due the the amount of wax. Raw honey has a lot more pollen that Pure Honey, so depending on what you want it could be good or bad On toast- Raw, its like a spread In tea- pure, raw will dissolve and may have some small debris that will sink to the bottom

The more natural is the honey you buy, then you find it more solid on winter time any more runny on summer (the solid-runny condition depends also from the origin of the honey ; if it is from thyme, flowers or conifer trees. When it crystallises that means that is has sugar in it, it is not good enough (not good quality). Try to find good quality as you can, and keep it out of warm places even when its solid.

I think it's to do with water content, if runny honey is left long enough after opening it goes solid due to evaporation.
Runny honey goes further.

Qualitatively both are the same, bur set honey has less moisture and is good as promotor of slimming. If you want to use it for immediate consumption as food at table, add about 10% warm water little by little, stirring all the while, until the water blends perfectly.Do this only to the portion to be consumed. For preservaion the one with less moisture is ideal

Set honey has a higher level of waxes and pollen in it. It depends on what flowers the bees have been feeding on; rapeseed honey is very thick and pale, and is almost impossible to clarify.
