I have a question for those who watched tonight's Iron Chef Am (with morimoto)...

I missed what Alton Brown said about how the Iron Chef made those beet pearl-like things (to resemble fish eggs).... he put the beet mixture in a bowl of water with what chemicals? I am really interested in this and it is just driving me crazy!!!!

and how about the challenger...playing with liquid nitrogen with bare hands. whoa. lol

The Iron Chef's assistant dribbled beet juice into water mixed with sodium alginate (Alton pronounced it algumate ... and there might even be such a thing but I believe it is sodium alginate which is a a tasteless power made from algae that is used as an emulsifier by the commercial food industry and also is in antacid tablets - nice.) You probably have it in many of the products on your shelf and in your freezer; you know the ones that have long lists of strange ingredients in very fine print on the boxes. The alginate (gum) coagulated the surface of the little balls of beet juice to keep them separate. When you ate them they probably were still liquidy inside and exploded like salmon roe does.

As far as the liquid nitrogen and the laser ... you would be surprised at what you can do, like eating fire or walking on hot coals or swimming in the lake in winter. But one day something will happen and he'll accidentally dip a finger in the Nitrogen and get some under a nail and maybe lose the tip a finger, or wave his hand in front of the laser and get a deep burn. [Did you see how red, thick and calloused Chef Cantu's hands are, this isn't the first time he's done this.]

This episode repeats twice on Thursday, twice on Saturday, and once next Sunday by the way.

I was just wincing watching them playing the the nitrogen with bare hands and then with the laser! OMG

You know I don't know what chemicals he put in to make the beet pearls. I am wondering if they have high lights or transcripts available on the website?
