Otolaryngology is the field of medicine that deals with the ear, nose, and throat. It's a surgical field, and they deal with problems of those organs and the head generally (but not the brain). You might see an ENT if you had a nose bleed that would not stop, a soft tissue tumor in your upper pharynx, or needed a treacheostomy for an endotrachial tube (placing a tube through a small incision in the neck into the lungs, typically done in people who require intubation for long periods of time).

Otolaryngology is the branch of medicine that specialises in the diagnosis and treatment of ear, nose, throat, and head & neck disorders. The full name of the specialty is otolaryngology-head and neck surgery. Practitioners are called otolaryngologists-head and neck surgeons, or sometimes otorhinolaryngologists (ORL). A somewhat outdated, but nevertheless commonly used, term for this specialty is ENT (ear nose and throat).
