Otolaryngology is the field of medicine that deals with the ear, nose, and throat. It's a surgical field, and they deal with problems of those organs and the head generally (but not the brain). You might see an ENT if you had a nose bleed that would not stop, a soft tissue tumor in your upper pharynx, or needed a treacheostomy for an endotrachial tube (placing a tube through a small incision in the neck into the lungs, typically done in people who require intubation for long periods of time).

The full name of the specialty is otolaryngology-head and neck surgery. Practitioners are called otolaryngologists-head and neck surgeons, or sometimes otorhinolaryngologists (ORL). I believe this is a fancy word for an ear nose and throat doctor. They deal with all problems, diseases and conditions in these areas.
