Any kind of noodle dish...either buy a prepared one like aglio oilio..or fettaccini alfredo. Or make some noodles and top with butter and parmesan cheese.
For me..rice is not hearty enuff for a shrimp dish....I feel like I'd go away still hungry.
A salad could be a good side...but even better would be hot stuffed tomatoes..
here's a recipe:
4 large ripe tomatoes
2 slices white bread
1 clove garlic..minced
2 tblsp chopped parsely
2 tsp thyme
salt and pepper.
Cut tomatoes in half...then run your finger thru to get the seeds..insides out.
shredd the bread in a food processor. Mix in garlic, herbs. Mix well. srinkle in a little of the oil.
Stuff tomatoes...drizzle remaining olive oil over each one.
Cook in oven on 375 for about 20 minutes.

Brushetta appetizer, White wine with the entree, Rosemary Red potatoes on the side, Something lite for desert to cleanse pallet. I would use sherbet or sorbet.

I would serve that with a salad with romaine lettuce,red onion,cucumber,tomato,yellow or orange bell pepper and some crumbled blue or feta cheese. Maybe a light pasta side like fettucine with lemon though I don't do carbs much but you might.

Rice Pilaf with Shrimp and Corn
Makes 4 servings
Ingredients:
1 teaspoon plus 1 tablespoon unsalted butter
3 scallions, white and green parts sliced separately
1 cup long-grain white rice
1/2 cup dry white wine
1 can (14-1/2 ounce) vegetable broth
1 cup fresh corn kernels
8 ounces uncooked large shrimp, peeled and deveined
1 tablespoon chopped fresh basil or 1 teaspoon dried
1 teaspoon minced fresh thyme or 1/2 teaspoon dried
salt and pepper to taste
lemon wedges
Preparation:
In a heavy medium-size saucepan, melt 1 teaspoon butter over medium heat. Add the white part of the scallions and stir 1 minute. Add rice and stir an additional minute. Add white wine and boil until liquid is almost absorbed, about 1 minute. Add vegetable broth and bring to boil.
Reduce heat to low, cover and cook until rice is almost tender, about 12 minutes.
Add corn, shrimp, basil, thyme and remaining 1 tablespoon butter to rice. Cover and cook until almost all liquid is absorbed, shrimp are cooked and rice is tender, about 5 minutes. Season to taste with salt and pepper. Transfer to bowl. Sprinkle with green parts of scallions. Garnish with lemon.

I would serve it as an appy, but if you want to serve it as a main dish -- angel hair w oil and garlic or risotto, & a light salad.
