It's funny that rostov included the "GI" diet as an alternative, since it, itself, talks about the concept of good and bad carbs.
:-)
As was stated by the poster above me, the "bad" carbs are the 'processed' carbs, such as white flour, and pure sugar.
That's why, for example, something like a strawberry is ok on "atkins" whereas whitebread is "bad"
Certain fruits, unfortunately, do contain bad carbs (not because they are processed, but because of the LEVEL of carbs
You can't sit and eat 10 pounds of strawberries and be healthy.
Atkins (that low carb diet) works by making your body enter a potentially dangerous state of affairs where you are trying to trick your body into turning the FAT stored in your *** into energy (as was the intent of your body storing fat, in the first place)
The problem with todays' eating habits is that (our bodys) store fat for future usage, but we never end up depriving ourselves of carb laden "sweets" [which is where energy comes from], so we just keep on adding on the fat.
Atkins DOES work, however, like any diet, if you QUIT it, you'll put the weight back on.
I also wouldn't recommend atkins (or ANY diet) without talking to an actual doctor.
The best diet, however, is "Taking in less than you expend"
[which every diet claims to do]
Are you fat? Excercise, and eat less. Hell.. Eat more, but break it up into 5 small meals to keep your body burning energy all the time.
I don't gain weight until I switch back to "one meal a day" [which my work inadvertently always ends up having me do]

Basically there are two types of carbs, complex and simple. Complex carbs, such as whole grains, oatmeal, wheat or nutty breads, brown rice, etc, take longer to digest and assimilate into the system, and often contain many other good nutrients. Simple carbs, such as sugar, starch, anything white really, are quickly assimilated and, if not utilized right away, will be quickly be converted to fat. Most of these don't contain any nutritional value and are often considered "empty" calories.
Fruits are good usually. These do contain sugar, but also have lots of other good nutrients and not enough sugar to be a big deal (unless you consume huge amounts, and of course it depends on what you put on them). If the cereal/bread/rice are good, such as whole grain cereals with little sugar on them, whole grain breads, and brown rice, then they are as good as fruit, if not better in some ways (complex carbs, see above).

The idea of looking at carb is falicious and unhealthy.
In terms of good and bad, I guess the carbs that take longer to digest would be "good" carbs whereas those that are too processed or too easily digested are bad carbs.
Take a look at the following which is pretty simple and straight forward.

Good carbs: complex carbs that are high in fiber. E.g., whole wheat pasta, brown rice.
Bad carbs: Sugars and simple carbs with little or no fiber. E.g., cakes, candy, white rice, plain white bread.
