This stew has rice and shrimp in it. It is spicy but won't scald your taste buds. The variety I had was cooked in a slow cooker. Can any one help me? It was delicious!

Sounds like a gumbo to me.

Creole Shrimp Gumbo

3 lbs okra, chopped in 1/2 inch pieces
4 lbs shrimp peeled and deveined
2 lbs smoked sausage cubed
2 medium onions Chopped
2 cloves garlic, chopped
2 cans tomato sauce
2 T Liquid Smoke
1 T Zatarain's Creole Seasoning
1 t Zatarain's Blackened Fish Seasoning
1/4 t Zatarain's Cayenne Pepper
½ gallon water

In large boiling pot, fry okra until most of the moisture is gone on medium heat, stirring to keep okra from sticking to the pan. Add tomato sauce to okra plus 1/2 gallon of water. Simmer on medium for 10 minutes.

In a frying pan, sauté shrimp until pink then add to okra. Next fry sausage and onions until limp. Drain and add to pot. Add seasonings and continue to simmer for 1 hour.

Serves 10 people.

swamp stew

Ingredients

3 medium or 5 small turnips
1 bunch celery
1 lb. carrots
4 onions
2 sticks butter
5 cans of Campbell's chicken broth
5 cans of Campbell's beef broth
water
1/2 head of cabbage
8 diced potatos
black pepper, rosemary, thyme, savory, bay leaves & and other spices you want, to taste
additional vegetables and water, as required (see directions)
Directions

Dice turnips, celery, carrots, and onions. In a large stock pot, melt the 2 sticks of butter, add vegetables and cook until tender. Add 5 cans of Campbell's chicken broth and 5 cans of Campbell's beef broth, then, using an empty Campbell's can as a measure, add 15 cans water. Bring to a boil.

Add chopped cabbage, diced potatos, and spices (to taste). Reduce heat and simmer 1 hour, "testing" the soup often. Panic that you don't have enough soup for the hash. Dice another turnip, more celery, carrots and onions. Mince some garlic this time. Sauté in butter until tender. Add water and boil. Add to soup. Taste a bowlful. Buy more broth and add to the soup. Realize that the soup is now outgrowing the pot. Get another 10 gallon soup pot. Split the soup between the two pots. Add more potatos and spices. Chop up some more cabbage and add to soup.

Look in the fridge for any vegetables that you can add. Look in the freezer for that 2 lb bag of frozen corn you bought when on sale. Add the bag of frozen green beans that you hated so much. Add to soup along with more water and broth.

Continue to taste the soup as you add more stuff and simmer. When you have relieved yourself the 4th time due to all the excess liquids that you have taken in (remember to wash your hands each time you use the bathroom), the stew is done.

Serve in extra beer cups with bread. Spoons are optional.

Notes

Make this soup the day before the hash and warm up the next day. Wrap pots in towels to keep it warm while you set the trail. Remember to fill the pots only about 3/4 full so that it doesn't spill all over the back of your car (and the flour) while you speed toward the start when you are inevitably late to lay trail.

Swamp Stew Recipe


1/2 cup chopped celery
1/2 cup chopped onion
1 large clove garlic, minced
1/4 cup butter
1/3 cup all-purpose flour
1/2 teaspoon salt
1/2 teaspoon dried thyme, crumbled
1/4 teaspoon pepper
1 can (14.5 ounces) diced tomatoes
1 can (14 ounces) chicken broth, or 2 cups homemade
1 to 1 1/2 cups sliced cooked okra
few dashes hot pepper sauce
1 can (8 ounces) minced clams, undrained
1 pound medium shrimp, shelled and deveined
3 cups cooked rice

PREPARATION:

In a skillet over medium heat, melt butter; sauté celery, onion and garlic. Stir in flour, salt, thyme, and pepper. Continue cooking, stirring constantly, until bubbly. Stir in the tomatoes, chicken broth, clams with liquid, and hot pepper sauce.

Cook and stir until mixture thickens and bubbles, about 3 minutes.
Add okra and shrimps; bring to the boiling point. Prepare 6 bowls. In the center of each bowl, make a mound of hot cooked rice. Ladle shrimp mixture around rice.
Recipe for shrimp stew serves 6.
