Marshmallow Brownies
2 dozen
INGREDIENTS
1 cup butterscotch chips
1/2 cup butter
1 1/2 cups all-purpose flour
2/3 cup packed brown sugar
2 teaspoons baking powder
1/2 teaspoon salt
1 teaspoon vanilla extract
2 eggs
2 cups miniature marshmallows
2 cups milk chocolate chips
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking pan.
Melt butterscotch morsels and margarine in a large bowl in microwave. Stir the mixture well and let it cool to lukewarm.
While the liquid mixture is cooling, mix flour, brown sugar, baking powder, salt, vanilla, and eggs into the butterscotch mixture; mix well. Fold in marshmallows and chocolate morsels.
Spread batter into a lightly greased 9x13 inch pan.
Bake 25 minutes. Be careful not to overcook.
S'more Brownies
1 - 9x13 inch pan
INGREDIENTS
1 (21.5 ounce) package brownie mix
6 graham crackers
1 1/2 cups miniature marshmallows
8 (1.5 ounce) bars milk chocolate, coarsely chopped
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Prepare brownie mix according to package directions. Spread into a greased 9x13 inch pan.
In a medium bowl, break graham crackers into 1 inch pieces and toss with miniature marshmallows and milk chocolate. Set s'more mixture aside.
Bake brownies for 15 minutes in the preheated oven. Remove, and sprinkle the s'more goodies evenly over the top. Bake for an additional 15 to 20 minutes, or until a toothpick inserted in the center comes out clean. Allow brownies to cool before cutting into squares.

CHOCOLATE COVERED MARSHMALLOW BROWNIES
1 box brownie mix
1 c. chopped pecans
15 (approx.) lg. marshmallows
1 lb. milk chocolate
I use either the milk chocolate blocks of candy or 2 (8 ounce) bars of Hershey's milk chocolate candy.
Make cake-like brownies as per recipe on brownie box. Bake for about 25 minutes (until brownies are almost done), remove from oven to add the marshmallows, then put back in oven until the marshmallows soften so you can spread over the brownies.
While the marshmallow-covered brownies are cooling, melt the chocolate candy very slow, stirring almost constantly to keep from burning. When the candy has completely melted, pour over the marshmallows. After the candy has hardened, cut into squares for your delicious chocolate-covered marshmallow brownies.
W.'S YUMMY MARSHMALLOW BROWNIES
1 Duncan Hines brownie mix, family size
1/2 to 1 c. nuts, chopped
1 1/2 c. miniature marshmallows
1 instant fudge mix or any chocolate glaze
Bake brownies according to directions; add nuts (look on brownies mix package). As soon as the pan is removed from oven, spread marshmallows on top, mashing down a bit. When cool, drizzle on top.

Marshmallows
About 1 cup confectioners' sugar
3 1/2 envelopes (2 tablespoons plus 2 1/2 teaspoons) unflavored gelatin
1/2 cup cold water
2 cups granulated sugar
1/2 cup light corn syrup
1/2 cup hot water (about 115 degrees)
1/4 teaspoon salt
2 large egg whites
1 teaspoon vanilla
Oil bottom and sides of a 13 by 9 by 2-inch rectangular metal baking pan and dust bottom and sides with some confectioners' sugar.
In bowl of standing electric mixer or in a large bowl sprinkle gelatin over cold water and let stand to soften.
In a 3-quart heavy saucepan cook granulated sugar, corn syrup, hot water, and salt over low heat, stirring with a wooden spoon, until sugar is dissolved. Increase heat to moderate and boil mixture, without stirring, until a candy or digital thermometer registers 240 degrees, about 12 minutes. Remove pan from heat and pour sugar mixture over gelatin mixture, stirring until gelatin is dissolved.
With standing or a hand-held electric mixer beat mixture on high speed until white, thick and nearly tripled in volume, about 6 minutes if using standing mixer or about 10 minutes if using hand-held mixer. In a large bowl with cleaned beaters beat whites (or reconstituted powdered whites) until they just hold stiff peaks. Beat whites and vanilla into sugar mixture until just combined. Pour mixture into baking pan and sift 1/4 cup confectioners' sugar evenly over top. Chill marshmallow, uncovered, until firm, at least three hours, and up to 1 day.
Run a thin knife around edges of pan and invert pan onto large cutting board. Lifting up 1 corner of inverted pan, with fingers loosen marshmallow and let drop onto cutting board. With a large knife trim edges of marshmallow and cut marshmallows into roughly 1-inch cubes. Sift remaining confectioners' sugar into a large bowl and add marshmallows in batches, tossing to evenly coat. Marshmallow keep in an airtight container at cool room temperature 1 week

1/2 cup chopped walnuts
In a saucepan over low heat, melt butterscotch chips and butter; cool for 10 minutes.
In a mixing bowl, beat eggs, brown sugar and vanilla. Add butterscotch mixture; mix well. Combine flour, baking powder and salt; add to batter and mix well. Stir in marshmallows, chocolate chips and nuts.
Spread into a greased 13-in. x 9-in. x 2-in. baking pan. Bake at 325 degrees for 25-30 minutes or until brownies test done with a toothpick. Cool before cutting.

CHOCOLATE BROWNIES WITH MARSHMALLOWS
BROWNIES:
6 tbsp. butter
1 sq. chocolate
1 c. granulated sugar
1 tsp. vanilla
2 eggs
3/4 c. flour
1/2 tsp. salt
1/2 tsp. baking powder
2 c. sm. marshmallows
Melt butter and chocolate together. Add all the ingredients except eggs. Beat together. Add slightly beaten eggs; mix. Pour in 9 inch square pan. Bake at 350 degrees for 20 to 25 minutes. Just as brownies are done, put marshmallows on them. Put back in the oven until marshmallows puff up. Drizzle with icing. I make a double batch and use a 9 x 13 inch pan.
ICING:
1 sq. chocolate
1 chunk butter
Little milnot
Powdered sugar
Melt butter and chocolate together. Add milnot (very little) and enough powdered sugar to make a drizzle consistency.

MARSHMALLOW COVERED BROWNIES
1 Duncan Hines family size fudge brownie mix
1 (7 oz.) jar Kraft marshmallow creme
6 oz. semi-sweet baking chips
Bake according to directions for "cake-like" brownies (350 degrees for 25 to 28 minutes in 9 x 13 inch pan). After removing from oven, spread marshmallow creme over top. Sprinkle with chocolate chips. Cool completely. Enjoy.

MARSHMALLOW BROWNIES
1 c. sugar
1 stick butter, softened
2 eggs
1 c. self-rising flour
4 tbsp. cocoa
1 tsp. cinnamon
Dash of salt
1 c. chopped pecans
Cream butter and sugar. Add beaten eggs. Sift flour and cocoa together. Add to egg mixture until smooth. Add nuts. Put into a 9 x 13 inch greased and floured pan. Bake at 350 degrees for 15-20 minutes. Pour small bag of miniature marshmallows over brownies. Return to oven just long enough for marshmallows to melt slightly.
ICING:
4 tbsp. cocoa
7 tbsp. milk
1 stick butter
Bring to a boil and boil for 1 minute, stirring constantly. Remove from heat. Add 1 box confectioners' sugar (sifted) and 1 teaspoon vanilla flavoring. Pour over marshmallows while hot.
