French Toast
Many types of bread can substituted for white sandwich bread, including cinnamon-raisin bread and chal lah. The recipe can be doubled and the cooking can be sped up by preparing batches simultaneously in two skillets or by using an electric griddle
Source: Americas test Kitchen Family Cookbook
8 slices high-quality white sandwich bread
6 Tbs (3/4 stick) unsalted butter
1 cup milk
1 large egg
2 Tbs sugar
2 tsp vanilla extract
3/4 tsp cinnamon
1/4 tsp salt
3/4 cup all-purpose flour
1 Adjust an oven rack to the middle position and heat the oven to 200 degrees. Arrange the bread on a wire rack set over a baking sheet and bake until slightly dry, about 15 minutes.
2 While the bread is in the oven, melt 2 tablespoons of the butter and whisk it together with the milk, egg, sugar, vanilla, cinnamon, and salt in a medium bowl. Slowly whisk in the flour until smooth. Pour the batter into a large shallow dish.
3 Transfer 2 pieces of the bread from the oven into the batter and soak both sides, about 30 seconds per side. Meanwhile, melt 1 more tablespoon of the butter in a 12-inch nonstick skillet over medium heat until beginning to brown, swirling to coat the pan. Remove the bread from the batter, allowing excess batter to drip back into the dish, and lay in the hot skillet. Cook until golden brown on both sides, about 2/4 minutes per side. Transfer the French toast to the wire rack and keep warm in the oven. Repeat with the remaining butter, bread, and batter.

Cooking Tips
Test Kitchen Tip: flour does the trick
All too often, French toast is as soggy on the outside as it is on the inside. To remedy this, we experimented with a number of techniques. In the end, we found that adding flour to the batter, although a bit odd, was a highly successful solution. It lends a crispness to the French toast that milk and egg alone cannot provide.

Buttermilk Pancakes
A very light and fluffy pancake that requires fresh buttermilk, but it's the best I've ever made!
3 cups all-purpose flour
3 Tbs white sugar
3 tsp baking powder
1 1/2 tsp baking soda
3/4 tsp salt
3 cups buttermilk
1/2 cup milk
3 eggs
1/3 cup butter, melted
1 In a large bowl, combine flour, sugar, baking powder, baking soda, and salt. In a separate bowl, beat together buttermilk, milk, eggs and melted butter. Keep the two mixtures separate until you are ready to cook.
2 Heat a lightly oiled griddle or frying pan over medium high heat. You can flick water across the surface and if it beads up and sizzles, it's ready!
3 Pour the wet mixture into the dry mixture, using a wooden spoon or fork to blend. Stir until it's just blended together. Do not over stir! Pour or scoop the batter onto the griddle, using approximately 1/2 cup for each pancake. Brown on both sides and serve hot.

1 1/2 cups all-purpose flour
3 1/2 tsp baking powder
1 tsp salt
1 Tbs white sugar
1 1/4 cups milk

1 In a large bowl, sift together the flour, baking powder, salt and sugar. Make a well in the center and pour in the milk, egg and melted butter; mix until smooth.
2 Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.

Just a tip about french toast. If you mix the cinnamon and vanilla together before you add them to the rest of the ingredients the cinnamon wont clump and float on top of the batter.

The best recipe for pancakes is on the bag of
"Martha Whites" self rising flour. Try it with buttermilk sometime. You'll need a little extra water for that.

French's Toast

6 eggs
6 Tbsp. milk
1/2 tsp. salt
pepper to taste
several drops vanilla
12 slices white bread, with crusts
butter for cooking

In a mixing bowl combine the eggs, milk, salt, pepper and vanilla with 3 Tbsp. water and beat lightly. Dip the bread slices into this mixture, one at a time, making sure both sides are well coated. Let the excess drip off.

In a heavy skillet with an generous amount of very hot melted butter brown the toast well on both sides. Serve hot with maple syrup, honey, sugar, jam or dessert sauces. (Serves 6).

Fluffy Pancakes

INGREDIENTS:
2 cups flour
2 tablespoons granulated sugar
1/2 teaspoon salt
1 teaspoon baking powder
1/2 teaspoon baking soda
1 cup buttermilk
3/4 cup milk
2 large eggs, separated
1/4 cup melted butter
vegetable oil
PREPARATION:
In a mixing bowl, combine the flour, sugar, salt, baking powder, and soda.
In another bowl, whisk together buttermilk and milk, egg yolks, and melted butter. Blend into the dry ingredients just until all ingredients are moistened.

Beat egg whites in another bowl until stiff peaks form.
Fold into the batter until well incorporated.
Heat a small amount of oil in a large skillet over medium heat. When skillet is hot enough for a drop of water to sizzle, scoop pancake batter onto the skillet in about 1/4-cup portions, spreading slightly. When edges are rather dry and bubbles are popping and bottoms are nicely browned, about 2 to 3 minutes, turn over and cook the other side until light brown.
