they were out of mild rotel at the grocery store, so i got the extra hot. i used 1lb of velveeta, 1 can of extra hot rotel, and 1lb of ground beef, but the dip is just too spicy. Is there anything i can do to calm down the heat of it?

I've never, but it "sounds" like a variation of a queso dip - it's usually made with Velveeta or the mexican cheese (mind blanking on it right now) Here's what I'd suggest. get a can (maybe 2) of rotel with the green chiles. a package of chorizo(usually come 2 sausages per pack), and a package of cream cheese(in the box not the tub). First off, keep the cream cheese and rotel out of the fridge - let the cheese warm up to room temp - the warmer the better as it will be more pliable and easier to work with. Take one of the chorizo links and slice. You'll need to cook it as it's "raw". Cook it until it starts to brown up - watch it since it's red it's hard to see if it's cooked or not. Once it's cooked - finely mince the meat. You can use a food processor or a blender if you like. Reserve the red fat for later. mix the cream cheese and rotel until fully blended and pliable. You may need the second can to add more liquid to the mix - cream cheese is a very dense cheese and IMHO not really that suited for dips. Add the chorizo and thoroughly mix. If it's still too thick - try heating it up in the oven on a low temp to make it more of a dip texture. Good luck!

Add more cheese-serve with sour cream(dairy helps ease the burn)-next time use less rotel if the extra hot is all you have-you can freeze the remainder.

My advice would be to add more beef and velveeta. Adding sugar or other heat tamers will ruin the flavour of this dip.

add a small can (or to taste) of "plain" chopped canned tomatoes (Red Gold is best) and more Velveeta if you still need to tame it down -
