Tell her the most important protection is to wear some form of padding for the breast area. My wife knows this from personal experiance. First time I marked her was a boob shot, I'm not sure who felt worse, but she kept playing!
Honestly, it doesn't hurt that bad. Just wear some heavy cloths, not sweatpants, no girley spandex crap, but jeans, and a Army camo jacket or a denim type jacket over a sweatshirt. If not, tell her to wear a couple layers of clothing, that way if it's too much she can take a layer off if not needed. Remember to tell her to stuff a couple rags, or cut out some foam padding and put in her bra and she's ready to go. Some gloves are a good idea too, knuckle shots do sting a bit. Also, a baseball cap worn backwards will help protect the back of the neck.
My wife plays regularly and sometimes practices with the team I play for and she not much for pain.

Tell her it doesn't hurt, just wear a T-shirt and jeans. After the adrenaline kicks in, she won't feel anything anyway. You can't go into paintball worrying about getting hurt. It's as close to real combat as you can get, without much higher cost and risk of serious injury. You play paintball because you want to challenge yourself to not get hit, and hit the other combatants. Getting hurt is just a fact of life. You know, like war.
