Well with a glass of water and big bread basket, eat the spicy food, then grab some bread. I seriously don't know how this works, but it works for me when I eat Indian and Greek food. Afterwards, wash it down with water ot ice tea. Do not try soda because the acid in it only worsens the burn in your mouth.

A cold milk product ( my excuse for why ice cream with every meal should be a federal law! :) ) works best but not always available. However bread (dinner roll, etc) works pretty well. While your mouth is burning, water is a bad idea - it only spreads the burn. Water works on temperature hot, not spicy hot.

It depends how bad it is, i suggest tums, safest way to go, but if it is not strong enough, some people rather to take maalox or other sorts of reflux kinds of medinces. (note to yourself, don't eat it again) drink a lot of water, it helps clean the body as well.
