i have decent hardwood throughout my old home, and just pried up the kitchen floor...two subfloors and two layers of tile...just got through scraping up the tar looking adhesive off that wood...the wood in the kitchen is different than the rest of the house..it is light blond color, no knots and is about 3 1/4 inches wide...i'm not sure what it is....we do not want to finish it professionally, but we want to maybe sand it a bit and add some protectant..don't know what to use...any ideas?

rent a floor sander from your local rental store, there are 2 types, drum (for heavy sanding) and plate (for lighter sanding) Be careful if you get a drum sander because you can leave little dips in the floor. as for protection, polyurethane, varnish, or any kind of floor finish can be use, it just depends on your taste.

If you are comfortable with the current color, the best thing to do is apply a clear urethane finish. The urethane provides luster and protects the wood from liquid spills.
