Granulated white sugar has an almost exact weight measure and liquid measure. Sugar measured in a measuring cup will equal it's dry weight. So 4 cups of sugar will weigh 1 pound, but not so with 4 cups of water or 4 cups of salt.

It depends on what you're measuring. A pound is 16 0z, but flour, sugar, etc. weigh less than a liquid. When measuring powder, a pint is a pound, the world around, so two cups is one pound. Generally. When measuring liquid, you need an ounce scale to measure to 16. oz otherwise the measurement is off.

It all depends upon what you ahve a pound of.
A pound of brown sugar has less in it than a pound of cake flour.
Do not confuse volume (cup measure) w/ weight (pound measure). An 8 oz cup of liquid does not always weigh 8 ounces!
