Cheddar: Serve mild-flavored Cheddar with firm, tangy fruits like apples and pears.
Goat cheese: Fresh-tasting goat cheese, with its characteristic sour undertones, goes best with the sweetness of dates, figs, and persimmons.
Brie and Camembert: These soft-rind, voluptuous French cheeses pair well with the sweet-sour taste of grapes, kiwifruit, and pomegranates.

My all time favorite is ice wine and a slice of gorgonzola..they work very well together. Other favorites include Sauternes and Foi Gras as well as Dry Champagne and fried chicken
