I used to roast my game in the oven but found the meat to always be tough. I found that flash frying it in a pan with some olive oil, keeps the meat tender and limits the "gamey taste" that some dislike. Just take a normal frying pan and put in just enough xtra vrgn olive oil to cover the bottom. Then take the breasts and sprinkle a pinch of salt and pepper on each side. Heat the pan to High to Med. High and put the breast in. Flip the breast when the bottom is tannish brown and do the same on the other side. The result may be a little med. rare in the middle but that only adds to the flavor.

To be safe cook it to 185 degrees Fahrenheit. Have the oven on 350 when you cook it.

understand what? i'm no longer a chef so i might defer to Betty Crocker, Or stable house standard jobs, or Martha Stewart or despite cooking guru is standard in the present day. even though it style of feels to me each and every might require a various cooking temperature with the intention to hold out the wonderful style.
