Buffalo Chicken Wings

preconditions: preheat oven to 375 degrees
Ingredients:
1lb. chicken wings
2 tbsp. butter
1/4 cup hot pepper sauce
Preparation Method:

bake wings for 20 minutes. in a saucepan, melt butter. stir in hot pepper sauce.

brush wings with sauce bake for 10 more minutes.

turn over and baste with sauce. bake 10 more minutes.

DeepDish Quiche Pizza

Ingredients:
4 ounces cream cheese
Three eggs
1/4 cup parmesan cheese
1/3 cup heavy cream
1/2 teaspoon oregano
2 cups shredded Italian cheese (mozzarella, romano, parm mix - or your choice)
1/4 teaspoon garlic powder
1/4 cup tomato sauce
1 cup shredded mozzarella
20 slices pepperoni
Preparation Method:

Beat cream cheese and eggs until smooth. Add cream, parmesan and spice. Spray 13 x 9-inch baking pan with nonstick cooking spray.

Put 2-cups pizza cheese in dish and pour egg mixture over. "Squish" around to mix. Bake at 375-degrees for 30-40 minutes until well browned.

Remove from oven and cool. When you're ready to eat, spread on pizza sauce, sprinkle on mozzarella, and layer with pepperoni (or any toppings you choose).

Bake about ten minutes in 375-degree oven until the toppings are bubbly and brown.

Bacon Cheeseburger Quiche

Ingredients:
1 lb. very lean hamburger
1 small chopped onion
4 slices crisp-cooked bacon, chopped in bits
3 eggs
1/2 cup mayonnaise
1/2 cup half-n-half
8 oz. shredded chedder or swiss cheese
garlic powder to taste (optional)
white pepper
Preparation Method:

Brown hamburger in skillet with onion. Remove and mix in bowl with bacon pieces, breaking up any larger clumps with a fork or pastry mixer until you have a fine mix. Drain well of any excess grease and press into the bottom of a deep-dish pie pan. Set aside.

Preheat oven to 350°F.

Combine remaining ingredients in mixer bowl and whip well. Pour mixture over beef "crust" and bake 40-45 minutes until top is browned and "set". Cool 15-20 minutes before slicing. This can be packaged in Ziplocs or plastic containers for meals quickly microwaved over the next 3-5 days. (Does not freeze well, though.)

Ricotta Frittata

preconditions: Preheat broiler.
Ingredients:
6 eggs
Salt and freshly milled white pepper
1 cup ricotta cheese
1/4 cup freshly grated Parmesan cheese
1 1/2 Tablespoons chopped marjoram
1 small clove garlic, crushed
2 Tablespoons of mixture of olive oil and melted butter
Preparation Method:

Beat eggs with 3/4 teaspoon salt and white pepper to taste. Stir in cheeses, marjoram and garlic. Heat oil and butter in 8- or 10-inch skillet.

Add egg mixture and lower heat. Cook until set, about 12 minutes, then brown 4-6 inches under broiler.

When done, slide frittata onto a plate.
Carbohydrates: 2 grams carb per serving.
Peanut Butter Cookies
Ingredients:
1/2 cup chunky or smooth (sugarless/natural) peanut butter
1/2 cup Splenda
2 Tablespoon Brown Sugar Twin
3/4 cup heavy cream
1/2 cup chopped pecans, almond pieces or broken hazelnuts
1/2 teaspoon baking powder
4 Tablespoons almond flour
1 Tablespoon macadamia nut flour (optional)
2 teaspoons vanilla extract
Preparation Method:

Preheat oven to 375°F. Mix all ingredients well and drop onto greased cookie sheet by teaspoonfuls. Bake about 10 minutes, or until set but not hard. Be careful not to burn!
Carbohydrates: Total carbs in recipe: 38. If making 10 large cookies, they are 3.8 carbs each. If making 16 smaller cookies, they are 2.4 carbs each.

Well... I don't know how many carbs are in this, but when my parents were low-carbing they ate this all the time.
Grill a chicken breast-when its almost done put a few strips of bacon on top and then any kind of cheese you want on top of that...Let the cheese melt..Its reallllly good. They would usually eat that with some sort of low carb vegetable.

Here are some recipes we love.
Grilled Salmon With Lime Butter Sauce
Just a sprinkle of zest and a dab of lime butter sauce beautifully highlight the flavor of grilled salmon.
6 (6-oz) pieces center-cut salmon fillet (about 1 inch thick) with skin
1 1/2 tsp finely grated fresh lime zest
6 Tbs lime butter sauce
1 Prepare grill for cooking over medium-hot charcoal (moderate heat for gas).
2 Season salmon all over with salt and pepper, then grill, flesh sides down, on lightly oiled grill rack (covered only if using gas grill) 4 minutes. Turn fillets over and grill (covered only if using gas grill) until just cooked through, 4 to 6 minutes more. Sprinkle fillets with zest and top each with 1 tablespoon lime butter sauce.
Servings: 6
Grilled Shrimp Scampi
Shrimp marinated in lemon, garlic, and parsley for 30 minutes, then grilled. Can be used as an appetizer or main dish.
This recipe also works well with scallops.
1/4 cup olive oil
1/4 cup lemon juice
3 Tbs chopped fresh parsley
1 Tbs minced garlic
ground black pepper to taste
crushed red pepper flakes to taste (optional)
1 1/2 lbs medium shrimp, peeled and deveined
1 In a large, non-reactive bowl, stir together the olive oil, lemon juice, parsley, garlic, and black pepper. Season with crushed red pepper, if desired. Add shrimp, and toss to coat. Marinate in the refrigerator for 30 minutes.
2 Preheat grill for high heat. Thread shrimp onto skewers, piercing once near the tail and once near the head. any remaining marinade.
3 Lightly oil grill grate. Grill for 2 to 3 minutes per side, or until opaque.
Servings: 6
We are also eating Stir fried Chicken or seafood
chili oil
garlic
skinless boneless breast of chicken, cut into strips OR
6 peeled shrimp, 3 scapllops, 1 piece of mahi-mahi (cubed)
a large handfull of frozen stir fry veggies
Soy sauce mixed with ginger and 1 teaspoon arrowroot (a low carb thickener)
Sezchwan spices
Cook in a hot wok.
My mom likes to saute blue crab in butter with proscutto.
