How long is sushi edible?
hello....i ordered 3 party platters of sushi at noon yesterday (Saturday). only two were eaten at the party last night. i have one whole platter left and it's been refrigerated since i got it home. about 28 hours. is it still safe to eat? or due to fact that it's raw fish, do i need to discard it? Thanks!

Sounds like the sushi has been in the fridge, covered since you purchased it...

It should be fine.

For foods to go south (bacterial growth) on you... you need moisture, air and heat.

The rice is vinegared (acidic) and the sushi is covered (no air) so you don't have air circulating drying things out and encouraging other things to happen.

However, if you have raw fish I wouldn't hold it beyond tomorrow.

I'm thinking the wasabi between the fish and the rice has moisture and may affect the fish in terms of texture.

Give it the look and sniff test if you keep it till tomorrow.

Sounds like another excuse to invite people over for another party!
