is it meat or what is it made from?

To me, it's recycled shoe leather, probably form the sole.

However, both of my brothers disagree. They both take frozen beef, slice it thin, marinate it in some kind of spice mix with soy sauce, a bunch of black pepper, garlic powder and liquid smoke. After marinating for 12 hours or overnight and thoroughly drying the meat on paper towels, one puts his in his food dehydrator, the other uses a very slow oven. They just leave it in until it's like leather.

(Come to think of it, I think my older brother uses Worcestershire sauce with his soy sauce.)

Absolutely. There is also deer and turkey jerkey, just about anything that is real meat but the packaging will tell you what kind of meat it is. Jerkey goes back a long way in history since people didn't have artificial refridgeration. It is made from thinly sliced meat that is slowly dried so it basically never spoils. It was a great source of protein (still is). Beef jerkey is usually made from flank steak - same cut we usually eat beef fajitas or London broil with.

Yes, it is dehydrated meat. You can make jerkey, but you'll need to buy a dehydrator. I have used beef and kangaroo. Both are delicious.
