Mayonnaise Cake
"Mayonnaise makes this cake nice and moist."
Original recipe yield: 2 -8 or 9 inch layers.
INGREDIENTS:
1 cup mayonnaise
1 cup white sugar
3/4 cup water
2 cups all-purpose flour
1 1/2 teaspoons baking soda
4 tablespoons unsweetened cocoa powder
1/2 teaspoon salt
2 teaspoons vanilla extract
DIRECTIONS:
Preheat oven to 350 degrees F (175 degrees C). Grease and flour two 8 or 9 inch round cake pans.
Sift all-purpose flour, salt, baking soda, and cocoa together.
Whip mayonnaise, white sugar, cold water, and vanilla together until mixed thoroughly. Add flour mixture slowly and beat at medium speed of an electric mixer for 2 minutes. Pour batter into prepared pans.
Bake at 350 degrees F (175 degrees C) for 20 to 25 minutes. Frost with your favorite frosting.

Pound cake is a good one for a teenage girl new to baking to make
Here is a recipe:
Cream Cheese Pound Cake
1 1/2 cups butter
1 (8 ounce) package cream cheese
3 cups white sugar
1 Tbs vanilla extract
1 tsp almond extract (optional)
6 eggs
3 cups cake flour
1 Preheat oven to 325 degrees F (165 degrees C). Grease one 10 inch tube pan.
2 Cream together the butter, cream cheese, and sugar until light. Stir in the vanilla and the almond extracts. Add the flour and the eggs alternately, beginning and ending with the flour. Pour batter into the prepared pan.
3 Bake at 325 degrees F (165 degrees C) for 1 hour and 15 minutes or until a toothpick inserted in the center comes out clean
Servings: 14
Yield: 10 inch tube pan.
Here is an even easier one that uses a box cake as a base:
Chocolate Lovers' Favorite Cake
1 (18.25 ounce) package devil's food cake mix
1 (3.9 ounce) package instant chocolate pudding mix
2 cups sour cream
1 cup melted butter
5 eggs
1 tsp almond extract
2 cups semisweet chocolate chips
1 Preheat oven to 350 degrees F (175 degrees C). Grease a 10 inch Bundt pan.
2 In a large bowl, stir together cake mix and pudding mix. Make a well in the center and pour in sour cream, melted butter, eggs and almond extract. Beat on low speed until blended. Scrape bowl, and beat 4 minutes on medium speed. Blend in chocolate chips. Pour batter into prepared pan.
3 Bake in preheated oven for 50 to 55 minutes. Let cool in pan for 10 minutes, then turn out onto a wire rack and cool completely.
Servings: 12
Yield: 1 - 10 inch Bundt cake.
Cooking time: 1 hour
Ready in: 2 hours

this is one of my favorite cakes
INGREDIENTS:
7 oz. semisweet or bittersweet chocolate (your preference), broken into small pieces
7 oz. butter
1 cup sugar
4 large eggs, separated
cocoa powder for dusting
PREPARATION:
Preheat oven to 375° and butter a 8-inch cake pan.
1. In a double boiler (over simmering water), melt the chocolate. Add the butter and stir with a spatula until the mixture is smooth.
2. Add 1/2 cup sugar to the egg yolks and whisk until it pale in color. Beat in the chocolate mixture.
3. Beat egg whites until they form stiff peaks. Gradually add the rest of the sugar and continue beating until the mixture is smooth and shiny.
4. Gently fold the egg whites into the chocolate mixture.
5. Pour into pan and bake 35-40 minutes or until tester inserted into the middle of the cake comes out clean. Cool for 10 minutes then remove from pan.
