Any easy idea for breakfast that you could just heat up is pancakes. Of course knowing they are guys, they would likely want eggs and sausage or bacon. Does the cabin have an oven, if so take along a few deep, heat proof skillets, or large baking dishes.
A day before: precook 1.5lb bacon or sausage and crumble it into small peices. Dice a bell pepper, small white onion, saute in bacon/sausage fat. Store meat in a plastic bag in the 'frig', same with the veggies. Then just before you leave pack the cooler with these items over ice. Brink a gallon of milk, loaf of bread or biscuits, butter, two dozen eggs, a quart (4 cups) of 1/2 and 1/2, shredded cheddar and jack cheese, and orange juice in the cooler as well. You may also want some foil and nonstick cooking spray. You can break the eggs into a plastic contaier with lid if you are worried about them breaking on the road trip, but use them no later than the next morning for best freshness. I personally would just pack the ice in around them in the plastic carton or buy them fresh at the local market.
In the morning when you prepare the breakfast, preheat oven to 350 degrees
Mix a dozen eggs and about two cups of 1/2 and 1/2 or milk or mixture of both together 9 mixture should be pale yellow). Add half of the meat and veggies and salt and pepper to taste. Add about one handful of cheese to this mixture. Spray your skillet or pan with the spray. Pour entire mixtire into one pan and top with a small amount of cheese. Bake about 18 minutes or longer, until the eggs are set and the inside of the dish is still slightly loose. Remove and set for a few minutes. If your oven seems a bit too hot, cover the dish with the foil so the top does not burn or lower the heat slightly. Repeat with the remaining dozen eggs, meat, veggies, milk and cheese. Serve with buttered toast/biscuits.

Beef stew and cornbread. If you've got a Trader Joes in your area, they have an awesome cornbread mix. If not, Jiffy is 2nd choice or make from scratch.
Here's my mom's beef stew recipe - it's abosolutely awsome and super easy. Note that it doesn't have potatoes in it. We serve this over a dollop of mashed potatoes or a baked potatoe at the bottom of the bowl.
Dredge 3/4 inch cubes of beef in flour with pepper and a pinch of cinnamon (yes cinnamon - it really compliments the beef, but just a little pinch) and maybe a little garlic powder. Brown in butter and olive oil. Add beef or chicken stock or broth and simmer til the meat is very tender, this could be 2-4 hours depending on the cut. I often do this the night before I'm planning to finish the stew. Add vegetables of choice, no cruciferous vegetables, I used to cut up all my own fresh vegetables - now I'm very lazy and just get a mixed bag of frozen veges. I also like to add a handful or two of frozen pearl onions. Add some sort of tomatoe product - I put in whatever I have on hand, sauce, paste, cut tomatoes, whatever, add more stock, to cover vegetables, simmer til vegetables are tender, check seasonings and adjust with salt and pepper, add oregano and perhaps garlic powder to taste and you're all set.
Breakfast suggestion would be blueberry pancakes, put fresh or frozen berries right in the batter. Or apple pancakes, same thing with grated apple. French toast is also a good one.

Here are two for you. Both can be made ahead of time, though the farmers breakfast is best made no more than one or two days before. The stew can be a lunch or supper. I hope they work Have a great time!!
Farmers Breakfast
1) Cut up 2 pounds bacon into bite size pieces, fry until almost done in a large skillet.
2) While bacon is cooking, cut up 9-10 medium sized potatoes into bite sized pieces, throw into bacon, cook until almost done (about 20-30 minutes).
3) Dice up 1 large onion, toss in when potatoes are almost done.
4) Crack 2 dozen eggs into a bowl and whip up. Once potatoes are cooked, pour into pan. Scramble fry until done.
5) You can top this with grated cheese, though I like Hollandaise sauce (you can buy a powdered mix and just make it with hot milk).
Stew
12 chicken thighs (boneless/skinnless) or 2 pounds stewing beef
2 large sweet potato
2 large rutabaga
4 large parsnips
4 large carrots
2 large red onion
3 turnip
2 cartons chicken/beef stock
salt and pepper to taste
Flour to thcken stew
Marinate thighs/beef in Kraft sweet onion vinigrette. Cut up and sautee. DIce veggies and put in a large pot with stock. Cook over a med heat for about an hour, until veggies are tender. Thicken stew with a flour/water mix. Serve with crusty buns and Yum!! It's a great winter comfort food, especially if it's cold where you are going!

Breakfast ideas: Should be high in protein for the guys, especially if they're going to be out hiking.... Bacon, sausage, eggs, toast, french toast, hash browns, fried potatoes, breakfast quiche or casserole, fresh fruit, etc. Juice, milk, coffee, hot chocolate to drink.
Lunch ideas: Something hot and hearty. Beef stew with potatoes & veggies, grilled ham & cheese sandwiches, barbecued chicken sandwiches, bbq pork sandwiches (pork or chicken can be made in crock pot with a bottle of bbq sauce and some spices). Chinese chicken salad, fruit salad, or green salad on the side. Soda, coffee, hot chocolate to drink.
Dinner ideas: Casseroles, lasagna, spaghetti, soups, mashed potatoes & gravy, cornbread, dinner salad, dinner rolls, roast beef, cheeseburgers, french fries, enchiladas, tacos, etc. To drink: Beer, wine, soda.

I know exactly what you mean. I always took eggs, milk, butter, bread, and flour as staples. But I always took casseroles. Lasagna, quiche, baked bean casserole which just has a corn bread crust on it. These things tend to go a long way. With the above staples you can make pancakes. Oatmeal also sticks to the ribs. A bag of rice will go a long way as well. These are things that you basically just add water to and your done. Good luck to you.

Potato Soup (creamy) with bacon and ham. Breakfast Burritos~ not sure they can be made in advance but they do not take long to make~flour tortillas, scrambled eggs,green pepper, onion, your choice of meat (ham, saugage, kielbosa etc...) make eggs with pepper and onion. Add cooked cubed meat, mix well. Add to heated flour tortilla (follow package directions) Top with shredded cheese, place in 350 degree oven to melt cheese. Fold like burrito and enjoy!
