Why do you pick on a Supreme Being as an example of something we reject? We reject lots of things for which there is no evidence whatever, just the same as you do.

It would be just as reasonable to ask why theists accept the idea.
The fact is that the human mind is constructed in such a way that it makes it necessary for people to believe in something. If we believed nothing, we would not be able to function. When confronted with the need to make a choice, we would have no background upon which to base a decision.
Given the need to believe, and the fact that the existence of God can neither be proven nor disproven, it makes very little difference which position one chooses. Both are beliefs, both seem to function well in light of experience.
Our nature also prompts us to think that everyone really believes what we believe. For theists, therefore, everyone really believes in God, but the atheist srebelliously act as if they do not. For atheists, it means that theists are hypocritically proclaiming that they believe something that cannot be true.
It's difficult for us to imagine the possibility that each side of this debate is sincere, but there you have it.

Perhaps because their idea of a supreme being is that he is perfect, and they would be guilty before him, and have to do what he says, and since they probably couldn't do that, all that guilt would drive them to reject the idea altogether.
But if they were told that the supreme being loved them, and went to extremes to justly declare them not guilty (if they so accepted the gift), because someone died in their place, and took on their guilt, and that the supreme being wanted to bless them forever, and let them bask in all his perfection, and let them have all the infinite pleasure that they can find in his company, then perhaps people might then want to believe it.
What may happen in someone's life:
Sin > guilt > fear of judgement in death > need of comfort > temptable > sin > more guilt > more need of comfort > try to be good > self righteousness > pride > more guilt needing to be buried > feel guilty before a morally perfect being > need of comfort > easily decieved > there is no god > self dependance > crisis > nowhere to turn (as god "doesn't exist") > drugs > theft > intense fear of police and intense fear of death regarding justice having to be done to them > despair > suicide > up to you what you think happens here.
Satan has the whole world under his power through guilt. Who can wipe out our wrongs, so that we are right (blamless, not guilty) before god? Jesus took our guilt on himself (he was sinless), so if we accept his gift, and recieve him as master, and saviour from sin through prayer...................

That is the default position. There are all kinds of things to not believe in without proof of existence. God is no different than teapots orbitting the sun, Flying Spaghetti Monsters, Zeus, etc.
The real question is why do you accept it's existence?

Because they don't HAVE to believe in one. No one should be FORCED to believe in a religion or forced not to believe in a religion. To get a more in depth answer, you're going to have to ask every single atheist on the Earth their exact reason why. I bet you every case is a bit different.

Complex beings evolve over time. The idea that some very complex being has existed for ever and created everything is contrary to every known natural law, and is literally beyond belief.

Atheists are too stupid, bigoted, ignorant, and narrowminded to not believe in God (or Gods/Goddesses - whatever). They don't value their own or others' spiritual welfare and how we value the power of human/animal souls, spirits, angels, ghosts, poltergeists,etc. (and they are out there! -some forces are from Satan) But remember - only Jesus Christ can save us from our sins if we let him!!!
