Well it depends on how you're cooking it. Frozen in the microwave usually doesn't have to be drained since you don't really add any water to it. Sauteed spinach using a fat or oil usually doesn't have to be drained either. If you are steaming it in a pan in 1/2 inch of water you might want to drain it slightly. I usually just leave it in the water since it keeps it warmer longer and I will actually drink the "juice" when I'm cleaning up. I just know I'm stealing my family's nutrients . . . sigh.

Frozen or fresh? My mom always thawed frozen spinach and then took handfuls and squeezed all the water out before using it. With fresh spinach, you should rinse it in a colander and let it drain, but it's okay if there is a little water on it.

Save yourself the grief. Don't steam it at all. Just pour boiling water over the raw spinach in a colander. It will automatically drain and blanch at the same time.

yes, drain it well! Actually, if you are using it as aningredient for another dish then take a handful at a time and squeeze out the excess water. If you are just serving it alone you still have to drain the water.
