Put spaghetti on to boil in a large pan off water.In a frying pan put a chopped shallot or finely chopped small onion and a crushed clove of garlic.Lightly fry in olive oil until soft but not brown.Add cubed bacon or pancetta ham pieces and continue to gently cook.In a jug mix 3 egg yolks or all of the eggs if you prefer with 30ml of single cream and 2 tablespoons of parmesan cheese.Remove the spaghetti from the boil when it is still a tiny bit hard,drain ff the water and immediatly add the contents of the frying pan followed by the conents of the jug making sure you are mixing the ingredients together all the time.Do not put the pan of spaghetti back on the cooker as this will cause the egg to scramble.Serve straight away whilst hot.Absolutely delicious.

Actually, the proper Carbonara is made with pecorino, not parmesan, and not bacon but dried pigskin, guanciale, and no cream. Yeah, it sounds mad, but actually, it is true. Promise!
For two:
250 g penne pasta
120 g guanciale, pancetta, or bacon, (small cubes).
3 egg yolks
30- 50 g pecorino cheese, grated
black pepper
Boil pasta.
Fry the meat.
Drain pasta, keep some of the water. Mix meat, yolks and most of the cheese with the pasta. Add some of the water if it seems to dry. Serve immediately with freshly milled pepper and the rest of the cheese.

spaghetti carbonara
Title: Pasta Carbonara (Silver Pallete)
Yield: 4 Servings
Ingredients
1 lb thick-sliced bacon, diced
2 tb salt
1 lb linguini
3 eggs
1/3 c chopped italian parsley
1 grated parmesan cheese
1 fresh ground pepper to taste
Instructions
1. Saute the bacon in a small skillet until crisp. Remove with a
slotted spoon and drain well on a paper towel.
2. Boil the water and cook linguini until firm and tender.
3. Meanwhile, beat the eggs thoroughly in a large bowl suitable for
serving. Have the cooked bacon and the chopped parsley ready at hand.
4. When the pasta is done, drain it immediately in a colander, and
pour into the bowl of eggs and immediately begin tossing it. As the
strands of pasta become coated with the beaten eggs, their heat will
cook the eggs.
5. Sprinkle the bacon and parsley on, and serve immediately. This is
great with lots of freshly grated Parmesan cheese and freshly ground
black pepper.

You fry one medium size onion in a little amount of oil. Bring water to boil and cook pasta (personally I think spaghetti is the best) 'al dente'. When pasta is ready, add fried onion and then, as many eggs as there are people who are going to eat ie. 2 eggs for 2 people, 3 eggs for 3...etc plus 1 egg for a pan. If you aren't a vegetarian, you can add some 'pancetta' (or simply smoked bacon) and fry it together with the onion; the taste is going to be much more interesting. Finally add some single cream, freshly chopped parsley, and a touch of black pepper. Buon appetito!;-)

saute the chopped bacon add heavy cream and i bit of parmezan.
season add the boiled spaghetti mix.remove from fire add an egg yolk and stir fast before it gets cooked .serve eat.
no onion or garlic

you have egg yolk and cream, it is a simple recipe, ham mushroom, pasta,mix the yolk and cream a little oregano and pepper, touch of salt, over warm pan, some flakes of parma giano rigiano,. sorted.
