Sorry this is a dead boring question, but I'm curious! As they ripen, do they become more acidic or basic. I think when they are just growing and start to just grow riper, they become acidic and as they ripen/rot they become more base...am I right? Or is there no change at all...?

As far as grapes go, the ratio of sugar to acid increases. overripe grapes often suffer from lower than ideal pH for fermentation, so my assumption that pH decreases

Not boring at all. it is somethingwe should know. After all, we put these fruits in our mouths, shouldnt we all be curious?

Fruits generally become more acid as they ripen.
