They have a lot of things to do:
Quito is a decent, laid back city in the mountains
Cotopaxi is a glaciar covered mountain that's 20,000 feet tall nearby
indigenous markets in Otavalo are very touristy but have some nice stuff at reasonable prices
The coast has some decent beaches
The galapagos is wonderful for nature and scuba diving
The jungle is excellent for adventure toruism
It is a bit dangerous but probably safer than Peru or Colombia

I LOVE Ecuador! We went twice last year. We are really into the eco-tourism thing and went to numerous bird watching lodges. We flew into Quito the first time and Guayaquil the second time.
I love the Andes. The weather is spectacular. Even though you are on the Ecuator its not hot. If you dip down on either the coast or the Amazon side it is a lot hotter, but very exotic. We didnt spend any time in Quayaquil, but we really loved Quito. Cuenco is a great place, too.
The people were great. The food is incredible. GO! You will love it.
