Lasagna
1 1/2 lb hamburger
2 cans (8oz) tomato sauce
8oz lasagna noodles cooked and drained
1 pkg (8oz) mozzarella cheese
1 envelope dry onion soup mix
1 C water
Brown meat, stir in onion soup mix, tomato sauce and water. Cover and simmer 15 mintues, stirring frequently. In 2 quarts baking dish alternate layer of noodles, meat sauce and cheese, end with cheese. Bake in moderate oven 15 minutes or until bubbly.
Mexican Spaghetti
1lb ground beef
1 small onion
3 C water
1 C cheddar cheese
1 can tomato sauce
1 envelope taco seasoning
7 oz spaghetti
Brown beef and onion, drain. Stir in water, tomato sauce and seasoning. bring to a boil break spaghetti into thirds and stir in sauce. Reduce heat, cover and simmer 20-25 minutes until spaghetti is tender. Sprinkle with cheese.
Easy Stroganoff
1 family size pkg of round steak, cubed
1 can golden mushroom soup
1 can cream of chicken soup
1 can french onion soup
1 can mushrooms, chopped with liquid
Combine in crockpot and cook until meat is tender, about 7 hours. Thicken slightly with corn starch, if desired. Serve with buttered noodles.
Tuna Noodle Casserole
8 oz macaroni
2 cans tuna
1 can cream of mushroom soup
8oz velveeta shredded cheese
Cook macaroni and drain. In casserole dish mix macaroni, cream of mushroom soup, tuna and 1/2 cheese. Put remainder of cheese on top and put it in the oven. Bake at 350 degrees for 30 minutes or until cheese is melted.
Penne Pasta
1 large onion, chopped
2 pkg porta Bella mushrooms, chopped (white button mushroomes work also)
1 large red bell pepper, chopped
Add
1 large can tomatoes, chopped with juice garlic to taste.
Cook 8oz penne pasta and drain. Pour sauce over cooked pasta and stir. Add 2 cups shredded sharp cheddar cheese, stir until melted.
Alfredo Sauce
8oz cream cheese
1 1/2 C Parmesan cheese
3/4 C butter
1 C milk
Combine. Heat slowly until creamy and smooth. Serve over pasta and chicken.

SICILIAN PASTA PESTO SALAD
2 lbs. ziti, penne, or other pasta, cooked
Pesto Sauce:
2 cups fresh basil leaves, chopped
1/2 cup walnut or pine nuts (optional)
4-6 large cloves garlic, minced or pressed
1 cup olive oil
1 1/4 cups grated Parmesan cheese
3-4 anchovies, blended (optional)
1/4 teaspoon crushed red pepper flakes
dash of black pepper
salt to taste
Place the olive oil into a small saucepan add the garlic, red pepper, grated imported Parmesan cheese and herbs and spices. Crush the anchovies into the oil until blended. Bring to a simmer for 1 minute and immediately remove from heat.
Pour this mixture over cooked hot pasta, stir well, and serve with bruschetta.
RAPID PASTA (BECKY'S PASTA)
Pasta (half a pan)
1 tin Tuna
Cheese to taste
1 tin Sweet corn
Virgin Olive Oil
Oregano
Pepper
Water
Add a "dash" of virgin olive oil and a generous pinch of oregano to a pan of water. Bring to the boil.
Add Pasta (two handfuls per person), be aware that pasta expands and that your pan is big enough.
Lower heat to a simmer. When the pasta is soft (about 20 mins), turn off the heat, drain the pasta, and leave in the pan. If the pan is not big enough to stir the contents, move the pasta to large mixing bowl.
Drain any fluids from the Tuna and Sweet corn cans, then add to the pasta. Stir to ensure the tuna breaks up. Add a sprinkle of pepper. Spoon onto plates. Grate cheese onto the top and serve.

Lasagna Casserole...all the yumminess of lasagna with half the effort!
1/2 (1 pound) pkg. penne noodles
1/2 pound lean ground beef
1 (26 ounce) jar tomato/pasta sauce
1 (15 ounce) Ricotta cheese
8 ounces shredded mozzarella cheese (divided into 2 cups)
1/4 cup grated Parmesan cheese
1 egg
Preheat oven to 350. Boil water and cook penne noodles as you would normally, drain from water and set aside for later. In saucepan, over medium heat, cook ground beef until browned; pour out fat. Add pasta/tomato sauce. In medium bowl, combine ricotta cheese, 1 cup mozzarella, Parmesan cheese, and egg. In lightly greased 2 1/2-quart baking dish (or any baking dish you have), layer penne, sauce/meat mixture, and cheese mixture. Repeat layers (like lasagna). Sprinkle remaining 1 cup mozzarella cheese over top. Bake 35 to 40 minutes.
Butter Noodles (my "recipe")
Boil water, add egg yolk noodles (enough for you to eat, I usually throw in two or three handfuls depending on how hungry I am), add some salt to the water. When the noodles are cooked to your liking, drain the water from the pot/pan. Add a scoop of butter to the pot, add the now drained noodles to the butter in the pan, stir to melt the butter and spread evenly over all the noodles. Viola you have "butter noodles"...simple, fast, yet magically delicious. You can add parsley, bay leaves, basil, whatever to the butter if you want more flavor.

QUICK AND EASY PASTA
1 bag wide egg noodles
1 (10 3/4 oz.) can broccoli cheese soup
1 (11 oz.) can corn
Boil noodles as directed on package. Drain and rinse. Add soup and corn to noodles; stir. Serves 4 to 6.

Very quick and simple. Boil pasta (spaghetti noodles). Melt 2 pads of butter and 1-2 minced garlic in pan--add shrimp and saute. Once noodles are done add olive oil then minced garlic and coursely chopped parsley, salt pepper to taste and crushed red pepper. take 15-20 mins. Easy, light, simple.

Easiest - take some mostaccoli noodles and prepare them, then take some kind of meat or veggies if you prefer and prepare that...add some tomato sauce and mozzarella and voila a meal...and it keeps for a few days so if you can't finish it can always refrigerate it....I like to use italian sausage or ground beef in this recipie.
