After dredging in egg, you can use any of the following...
*crushed potato chips(BBQ or sour cream/onion)
*crushed cereal(cap'n crunch, corn flakes, etc)
*packet dry instant mashed potato flakes
*stovetop stuffing mix
*grated parmesan cheese from the can
OR
toast your sliced bread till pretty hard and put in blender or food processor and gve it a pulse or two, mix with spices and go!
If you have at least one of these items in your pantry, you are as good as gold!

Either way comes out delicious. Breadcrumbs may be easier, as they don't require as much, if any, seasoning like flour does. For perfectly coated, crispy, tender, chicken fingers, pork chops, etc., I use this method: Put about a half cup of flour in an empty pie tin, and season with salt & pepper. In second pie tin, beat 1 or 2 eggs with some water. In a third pie tin, add a cup of seasoned breadcrumbs. flour the chicken strips lightly, then coat with egg, and then breadcrumbs. Fry until golden brown on both sides, and allow to drain and cool on a wire rack above a baking sheet. You can adjust the amounts according to how much you need to prepare. Just discard the pie tins when finished.

an idea that always makes my neice happy for lunch. Go buy some prebreaded chicken strips....and those packets the make ranch dressing, with just the dry spices in them. Dip the chicken in egg whites and then roll them in the spice mixture and bake them following the intructions on the boz and volia'! Yummy ranch chicken strips. Oh, and for enough to feed my neice and I we use 2 packets of the dressing mix. Enjoy!

Easy Chicken Fingers
1 lb boneless skinless chicken breasts
2 teaspoons cajun seasoning
1 1/2 cups crushed corn flakes
1/4 cup all-purpose flour
1/2 cup cooking oil
Cut the chicken breasts into 1" strips; sprinkle them with the Cajun seasoning.
Combine the corn flakes and flour in a shallow bowl.
Pour the oil into another shallow bowl.
Dip the chicken strips into the oil, then coat them with the corn flake mixture.
Place the strips in a foil-lined baking pan.
(I use a 9x13).
Bake at 400 degrees for 10 minutes, then turn each strip and bake for another 10 minutes.
Serve with your favorite dipping sauce!
4 servings
Chicken Fingers
boneless skinless chicken breasts
ranch salad dressing
parmesan crackers, smashed
Cut chicken into strips
Dip chicken in the salad dressing and then in the smashed crackers!
Bake for 15-20 minutes at 400F

I cut my chicken in strips, 1 bowl with egg and water or milk whip together, place chicken pc's in egg mix, in 2nd bowl put flour and spices, salt and pepper or fine or add paprika. Dip chick/egg pc's in flour and put in skillet w/hot oil or crisco. Brown, turn, brown other side, remove and enjoy. Hope this helps.

Crumble the bread into crumbs and toast them in the oven for about ten minutes to dry them out.
Or you can use crushed cornflakes
Or crushed potato chips
Or crushed corn chips
Just use them like you would breadcrumbs
