Stew
* 1-2 handfuls of frozen1 or fresh diced vegetables
* 1 medium potato, peeled & cut into 8 pieces (optional)
* 2 pints of water
* 55g (2oz) red split lentils
* 1 vegetable stock cube
Dumplings
The following recipe makes four dumplings
* 110g (4oz) self-raising flour
* 55g (2oz) shredded suet (beef or vegetable)
* Pinch of salt
* Ground mixed spice (optional)
* 6 - 8 fl oz water to bind
Pour two pints of water into the saucepan.Add the red split lentils. Add all the vegetables. Place lid on saucepan and bring to boil.
Once the stew has come to the boil, simmer for about 20 - 25 minutes. While waiting for stew to boil make the dumplings. If you wear any rings, remove them.
Dumplings
Using a large bowl, add the flour, suet, pinch of salt and couple of shakes of mixed spice, and mix well using your fingers.
Starting with a few tablespoons, add enough water to bind the dough until it forms a soft (but not sticky) ball.Separate the dough in half, and then half again, so that you have four even lumps. Before placing them in the pan, you'll need to sprinkle the vegetable cube over the stew, and stir.Roll the lumps of dough in your hand to form balls, and place them in the stew.Simmer for 20-30 minutes. To check if the dumplings are cooked, after 20 minutes, gently press one; if it bounces back up, it's cooked.
After serving you will find there is some left over; once cooled this can be put in a container in the fridge and heated up the following day as a delicious vegetable soup.

My own casserole recipe and if I say so myself, it's delicious!
1 lb stewing steak
2 onions, sliced into rings
carrots
mushrooms
english mustard
runny honey
tomato puree
flour
can of bitter
put a little cooking oil in the bottom of a large saucepan
add the steak that you've coated with flour and fry gently then add the onions and continue to fry till browned.
Add a large dollop (about a dessert spoon) of runny honey and stir in.
add approx 2 teaspoons of english mustard and stir in
add about a dessert teaspoon of tomato puree and stir in.
Pour over about 2/3 of the can of bitter plus about a mug of water and stir well so that the meat is not sticking to the bottom of the pan.
Cook on a low heat, stirring occasionally for about an hour and a half.
Add the carrots and mushrooms and cook for another half a hour.
If you want dumplings, I use Aunt Bessie's mix - it may be cheating but you get perfect ones every time! Make them up as per packet and add for last half hour with carrots etc.

YOu can find lots of stew recipes on line, recipezaar.com, allrecipes.com, verybestbaking.com, recipesource.com are some of my favorites. For dumplings, if you are a person who uses mixes, just buy a box of biscuit mix, then make as directed but make the dough a little thinner adding more liquid. Drop the dough on the hot stew, casserole, etc. Cook uncovered until the biscuits are done! If the base dish is not hot enought, the bottom of your dumplings will get soggy. You can also add things to the biscuit mix, like herbs, cheese, etc. depending on what you are putting the dumplings on!

For me I prefer cooking stew in a pan.If you have a large pan all depends on amout you require.
Potatoes
Carrots
Turnip
Leeks
I nfact any veg you want to use,I stew meat untill nearly tender then add potaoes,carrots& turnip.I use a couple of Stock cubes &
add pepper.Dumplings take around 20 minutes.When everything is nearly cooked i add cornfour mixed with water to thicken it up.Add dumplings leeks take about 10 to 15 minutes add them.If your using tinned veg Add at same time.Remember to keep checking it incase it sticks to bottom of pan.Good Luck.PS/ I do not casserole has dumplings go rock hard

easiest way is
get three chicken breasts
chop them up
get a large onion
some mushrooms
four carrots
two large potatoes
a head of cauliflower
a head of broccoli
and a sprig of thyme
chop all the ingredients up
get two chick stock cubes
dissolve in two pints of boiling water
put all veg and chicken into casserole dish
pour over stock
add thyme
place in oven at gas mark five
leave to cook for 1hour and a half
remove and check veg and chicken are cooked
if gravy is not thick enough add cornflour by the teaspoon
stirring until consistency preferred is reached
add salt and pepper to taste.
to make a stew
subtitute the chicken for meat fry in a pan
till coked
add flour to coat
add veg
and meat stock
use packet dumplings
and follow instructions
add to mix and cook as before.

1 tbsp olive oil
¼ red onion, chopped
½ romero pepper, sliced
55g/2oz green beans, sliced
¼ leek, sliced
1 garlic clove, crushed
200ml/7fl oz vegetable stock
2 tbsp white wine
3 tbsp fresh parsley, chopped
salt and freshly ground black pepper, to taste
Method
1. Heat the oil in a saucepan over a moderate heat.
2. Add the red onion and the pepper and sauté for 2-3 minutes, before adding the beans, the leek and the garlic.
3. Cook for a further 1-2 minutes.
4. Add the vegetable stock and the white wine, bring to the boil, then reduce to a simmer for 12-14 minutes, or until the stock and wine have reduced and the vegetables are tender.
5. Add the chopped parsley and the seasoning, to taste, then spoon into a serving bowl, to serve.

Green bean Casserole
1qt green beans (drained)
2 slices bacon
1 can mushroom soup
1/2 C water
French Fried Onions
Brown bacon until crisp. Crumbled bacon into green beans. Add bacon drippings, soup and water our into greased casserole dish. Bake at 350 dgrees for 1 hour and 10 minutes. Before removing from oven, place onions on top of casserole.
Broccoli Casserole
1 pkg frozen broccoli
1 tsp salt
2 T oleo
1 C cheese, cubed
1 can cream of mushroom soup
1/2 C Minute rice
1/2 C milk
Cook broccoli in water. When done, drain. Add salt, oleo, milk, soup, and cheese. Pour into casserole with the rice. Bake at 350 degrees for 30 minutes.

Do you have an electric crock pot? This is the best way to make a stew. It takes a little time in the morning but when you get home from work it's done!
No measuring, just throw in what you like: Carrots, potato's celery, onions , add a piece of tri tip cut up or round steak(cheaper)you can even use chicken. I like beef better! 1 can of cream of mushroom soup, splash of wine(red),coffee if your a drinker and salt ,pepper and garlic salt. cut up everything into bit size pieces and stir it all together.

Do you have a crock pot?
If you do, put in a can of V8 juice, chopped potatoes, a bag of baby carrots, and a can of green beans and let it cook until the potatoes are soft. Makes a great stew! You can also add beef if you want.
This is a really easy recipe. Just put it all in the pot and turn it on! You can add more of something for example if you really like carrots--just add more!

To make a nice Stew you need:-
Swede
Carrots
Parsnip
onions
Potatoes
Stewing Beef or Lamb
Prepare Veg.. Then put meat into saucepan with stock, Bring to boil then simmer for 20mins. Add onions first, then veg. Always put the potatoes in last, I would simmer it for 10mins before you add Potatoes. Simmer for 20mins.
To make Dumplings:- you need flour 5oz & suet 2oz mixed with water, make them into little balls then add and simmer for 20mins. The Dumplings should taste lovely! Hope you enjoy!
